Honey Dijon Chicken

These are so so good! We cooked them on the George Forman and I topped mine with extra Dijon mustard! They are perfect for a lettuce wrap or a burger bun!

The Fixin's
1-2 lbs Chicken
2 Tablespoons Cajun Seasoning
1/2 Cup Dijon Mustard
1/2 Cup Honey
1 Teaspoon Lemon Juice
6-8 Slices of Provolone Cheese
Head of Lettuce

Let's Cook Dinner
Mix together seasoning, mustard, honey, and lemon juice
Pour cover chicken in plastic bag and let marinate for several hours
Bake chicken or use George Forman Grill
Top with cheese and broil for 3 minutes
Serve in lettuce wrap

Garlic Chicken Legs

This meal was awesome! The chicken was fall of the bone tender and tasted great as left overs! The Fixin's
2 lbs Chicken Legs
12 oz Tomato Sauce
1 Cup Soy Sauce
1/4 Cup Brown Sugar
4 Cloves Minced Garlic

Let's Cook Dinner
In a bowl, combine tomato sauce, soy sauce, brown sugar and minced garlic
Spray crockpot with non-stick cooking spray
Place chicken in crockpot
Pour sauce over chicken
Cook on low for 6 hours

Fried Egg Burger

You guys this was awesome! It was one of the best paleo meals I have ever had! Don't leave out the lettuce, it makes it so you can pick up the burger and it keeps it less messy. We topped our with mustard but you can experiment.



The Fixin's
2 lbs Ground Beef
4 Eggs
4 Slices of Bacon
Head of Lettuce
Salt/Pepper

Let's Cook Dinner
Form ground beef into burger patties
Season with salt and pepper
Cook on skillet or grill
In a separate skillet cook bacon and set aside
Fry eggs to desired level
On a piece of lettuce, place burger and top with bacon and egg
Serve with a condiment such as mustard if desired

Sriracha Pork

This is the best pork we have eaten in a while! We have eaten it every week for the past couple of week and I keep meaning to take a picture but never do! I'm not sure Sriracha is paleo but it sure is good!

The Fixin's
1 lb Pork Chops
3 Tablespoons Soy Sauce
3 Tablespoons Olive Oil
1-2 Tablespoons Sriracha

Let's Cook Dinner
In a bowl mix soy sauce, olive oil, and sriracha until well blended
Pour sauce over pork

Melt 2 tablespoons of butter in a large skillet
Cook pork until no longer pink

****To freeze, place pork in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Almond Flour Pork Chops

Remember Paleo Fried Chicken? Well I saw a similar recipe for pork and decided to mix the two recipes together. It turned out great and is a perfect sub for fried chicken!

This is the fried chicken but the pork looks the same!!


The Fixin's
1 lb Pork Chops
2 Eggs
1 Tablespoon Olive Oil
1 Cup Almond Flour
1 Teaspoon Paprika
1 Teaspoon Garlic Powder
1 Teaspoon Cajun Seasoning
1/2 Teaspoon Basil
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Let's Cook Dinner
Preheat to 400F
Whisk eggs in a mixing bowl
In a large bowl combine almond flour, paprika, garlic powder, Cajun seasoning, basil, salt, and pepper
Dip pork into egg mixture and then into dry mixture
Heat olive oil in large pan
Brown pork on both sides in the frying pan for about 3 minutes each side
Place in greased baking dish
Bake for 15-20 minutes or until pork in no longer pink

Chicken Sausage Cacciatore

This was super yummy and the perfect weeknight meal. I love coming home at lunch and throwing something in the Crockpot. I also loved the idea of combining chicken and sausage, it gave the meal and wonderful flavor! We used green bell peppers but next time I am going to splurge for multi-colored. I had to take a picture of the left overs as the Mr. was eating because we ate dinner so fast!


The Fixin's
.75 -1 lb Chicken
1 Package Italian Sausage Links
3 Bell Peppers
1 Package Sliced Mushrooms
2 Cups Tomato Sauce
1 Teaspoon Oregano
1 Teaspoon Basil
1 Teaspoon Parsley
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder

Let's Cook Dinner
Grease Crockpot
Place chicken and sausage on the bottom
Top with mushrooms and sliced bell peppers
In a bowl combine sauce and seasonings
Pour into crockpot
Cook on high for 4 hours
Remove meat and slice
Put back in Crockpot and stir
Serve

Asian Beef & Asparagus Salad

I love Asian style food but it's hard to cook at home since we try to avoid rice and sugar! I splurged a little on this recipe because it has brown sugar but not too much. You could even use less or probably use honey instead. Instead of using rice as a filler, this meal had tons of veggies and I didn't feel bad going back for seconds! Of course I forgot to take a picture so you are just gonna have to trust me!



The Fixin's
1 lb Ground Beef
2-3 Tablespoons Brown Sugar
1/4 Cup Soy Sauce
1 Tablespoon Olive Oil
3 Cloves Minced Garlic
1/2 Teaspoon Ginger
1/2 Teaspoon Crushed Red Pepper
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
Spinach Leaves
One Bunch Asparagus

Let's Cook Dinner
Heat a large skillet over medium heat with oil
Preheat oven to 400F
Add ground beef and minced garlic
Brown ground beef in skillet and drain most of the excess fat, leaving a small amount
In mixing bowl combine brown sugar, soy sauce, ginger, salt, pepper and red pepper until well mixed*
Pour over beef
Stir and Simmer for five minutes
While the beef is cooking, place asparagus on a baking sheet
Drizzle with oil and salt
Bake for 10-12 minutes
Place spinach on a plate
Top with beef and asparagus
Enjoy

Ginger Garlic Turkey Patties

You guys...don't even get me started on my lack of blogging. Don't worry, we have still been eating in the Moore household, just not a whole lot of new recipes. This one was pretty great and a nice introduction back into cooking new things! I used ground turkey but you could use chicken too. It was easy and perfect for a last minute dinner!


The Fixin's
1 lb Ground Turkey or Chicken
1 Teaspoon Ginger
4 Cloves Garlic
1 Tablespoon Lemon Juice
1 Teaspoon Pepper
1 Teaspoon Garlic Salt
2 Teaspoons Coconut Oil- for cooking
1 Cup Marinara Sauce- for dipping

Let's Cook Dinner
Combine meat and spices
Form 10 small patties
Melt coconut oil in a large skillet
Cook the patties over medium heat for 4 minutes on each side
Serve with Marinara Sauce

Crockpot Pesto Chicken

Ever since I found crockpot lemon chicken, I have be keeping my eye out for easy crockpot recipes that can be served over a bed of spinach. Eating paleo and the crockpot don't often mix but I got lucky with one! As we finally get some summer like weather here in the mid-west, I'll be looking for ways to avoid using the oven and I think this meal will make a regular appearance! We topped ours with a little bit of grated parmesan cheese and served it over a bed of spinach. I'm thinking mash potatoes would be great too!


The Fixin's
1-2 lb Chicken Breasts
6 oz Pesto
1/2 Chicken Broth
1 Packet Ranch Dressing Seasoning (or 1/4 cup homemade)

Let's Cook Dinner
Grease crockpot
Add pesto, chicken broth, and ranch seasoning
Stir until well combined
Add chicken to pot and coat in sauce
Cook for high for 4 hours
Shred chicken and stir in sauce
Serve over spinach (or mash potatoes!)

BBQ Pork Tenderloin

This meal was a life saver! We have been so busy this week and will be every week until finals are over...or I collapse which ever happens first! It was nice to throw this in the crockpot right before class and have it ready when I got home. It is super simple and perfect for when you have no idea what to cook for dinner!


The Fixin's
2-3 lb Pork Tenderloin
2 Cups BBQ Sauce
1 Cup Water
1 Teaspoon Pepper
3 Cloves Minced Garlic

Let's Cook Dinner
Spray your crockpot with cooking spray
Place pork tenderloin in the bottom of the pot
In a mixing bowl combine water, bbq sauce, pepper, and garlic
Pour sauce over pork
Cook on high for 4 hours

Sausage Eggs Cups

I am in love with egg cups. Since finding them on pinterest I have made ham egg cups, turkey egg cups , and bacon egg cups but these might be my favorite! Egg cups are so awesome because you can eat them on the go and are the perfect single serving! I normally grab two on Monday morning and eat them after I get to work! Be creative, there are so many ways to serve these!


The Fixin's
1 lb Crumble Sausage
12 Eggs
1 Cup Fresh Spinach
Garlic Salt
Pepper

Let's Cook Dinner
In a skillet cook the sausage and drain the fat
Grease a muffin tin
Preheat oven to 350
Chop spinach into small pieces
Place spinach in the bottom of each muffin tin
Spoon the sausage over the spinach
Crack one egg into each cup
Top with pepper and garlic salt
Bake for 25 minutes

Paleo Coco-Pumpkin Muffins

After my long run today I needed a snack and nothing was doing the trick. Sometimes I just really miss bread! We have had lots of success with other types of muffins (apple, sweet potato, banana) and I had a can of pumpkin the fridge that was screaming to be eaten. I added coco powder mainly because what I really wanted at that moment was a snickers bar but it did add a nice flavor. Next time I think chocolate chips would really do the trick! These are not too sweet and best served with some honey or almond butter on the side!


The Fixin's
1 Cup Pumpkin Puree
1/2 Cup Coconut Flour
4 Eggs
1/4 Cup Honey
2 Tablespoons Coconut Oil
1 Tablespoon Coco Powder
1 Tablespoon Flax Seed
2 Teaspoons Cinnamon
1 Teaspoon Vanilla
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder

Let's Cook Dinner
Preheat oven to 400F
In a mixing bowl whisk eggs
Melt coconut oil and add to eggs
Stir in pumpkin and all dry fixins
Mix until well blended and there are no clumps
Grease 12 muffin tins
Spoon mixture into pan
Bake for 20 minutes

Sweet Potato Muffins

The other night we both had a sweet tooth and really wanted to make sweet potato brownies...but we didn't have enough coco powder or any chocolate chips! So if we were going to keep ourselves from going to store and buying ice cream, we needed to be creative! These are super yummy and best when topped with nut butter or honey. They are sweet but not too sweet and totally could be eaten for breakfast! Next time I am going to try adding chocolate chips or raisins!


The Fixin's
2 Large Sweet Potatoes (cooked & peeled)
1/2 Cup Coconut Flour
1/2 Cup Ground Flaxseed
1/4 Cup Honey
1 Tablespoon Nut Butter (almond or sunflower)
6 Eggs
1 Teaspoon Salt
1 Teaspoon Baking Soda
2 Teaspoons Vanilla
2 Teaspoons Cinnamon

Let's Cook Dinner
Preheat oven to 350F
Whisk eggs
Add in sweet potatoes and mash together
Add in all other fixins
Grease the muffin cups and spoon mixture into the pan
Bake for 30 minutes

Spicy Turkey Burgers

This was yummy! I am always looking for burger recipes because it is so easy to just drop the bun and call it paleo! I'm sure it would be good with a bun too though! I am really looking forward to the summer when we can make these on the grill and not in the oven!


The Fixin's
1 lb Ground Turkey or Chicken
1/4 Cup Soy Sauce
1 Teaspoon Paprika
1 Teaspoon Chili Powder
1/2 Teaspoon Seasoning Salt
1/2 Teaspoon Cumin
1 Clove Mined Garlic
1 Pineapple or Can Pineapple Slices
4 Slices Pepper Jack Cheese

Let's Cook Dinner
Preheat oven to 400F
In a mixing bowl combine meat, soy sauce, paprika, chili powder, seasoning salt, cumin, and garlic
Mix until well blended
Form into 4 burger patties
Place on a baking sheet
Bake for 10 minutes
Flip
Bake of 10 minutes
Top each with a slice of cheese
Bake until cheese is melted
Serve with pineapple on top

Place one slice of ham on the bottom of each muffin cup

Avocado Chicken Salad

This was so so so good! I am not a huge chicken salad but after hearing how awesome this recipe was I knew I needed to try it. This would be perfect to make for lunch and eat all week. It's full of protein and so much better for you than normal chicken salad. I ate mine with carrots and also plain. I am also considering adding some chopped tomatoes next time. Before you start this recipe you need to shred the chicken, I like to boil mine with water and seasonings. Check out this site for some great photos and instructions.

3 Chicken Breasts
3 Avocado's
6 Tablespoons Lime Juice
1/4 Cup Greek Yogurt
1 Tablespoon Olive Oil
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder

1 Teaspoon Salt
1 Teaspoon Pepper

Let's Cook Dinner
Cook and shred chicken
Peal and slice avocado's
Place avocado's, lime juice, yogurt, olive oil, and spices in a blender or food processor
Blend until well mixed
Combine with chicken in a large mixing bowl
Chill and serve with veggies

Turkey Taco Burgers

Ok I will be totally honest and agree with you that these look and sound pretty weird BUT just trust me on this one. I was so nervous, I started eating mine before I decided I wanted to take a pictures and share it with you guys! Lucky for me, they are great! As you can see, I had a hard time getting the veggies to stay on top of my burger, so I ended up serving it on a bed of greens and veggies!


The Fixin's
1 lb Ground Turkey or Chicken
2 Eggs
1/2 Cup Shredded Cheese
2 Tablespoons Chili Powder
1 Tablespoon Cumin
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Teaspoon Salt
1 Teaspoon Crush Red Pepper
2 Tomatoes
1 Bell Pepper
2 Cups Fresh Spinach

Let's Cook Dinner
Preheat oven to 350F
Whisk eggs in a large mixing bowl
Add 2 tablespoons of cheese, turkey, and all spices
Mix with your hands until well blended
Four 4 burger patties
Place on a baking sheet lined with greased tin foil
Bake for 15 minutes
Flip
Bake for 15 minutes
Top with slices tomato, bell pepper, and spinach
Top with cheese
Bake for an additional 5 minutes

Stove Top Salmon Patties

Remember the salmon cakes that I made a few weeks ago? Well I had planned on making them today for lunch but my muffin pan was not cooperating, so I made these babies instead! I combined a few recipes to adjust from my traditional tuna cakes and I am in LOVE. After a crazy crossfit workout this morning, a protein packed lunch was just what I needed. I topped mine with dill relish and a bit of ketchup and mustard!

The Fixin's
1 14oz Can Salmon
2 Eggs
1 Tablespoon Lemon Juice
1 Tablespoon Yellow Mustard
6 Tablespoons Almond Flour
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1/4 Teaspoon Cajun Seasoning

Let's Cook Dinner
Beat eggs
Drain salmon
Mix all the "fixin's" together into a mixing bowl
Form 8 patties and place on a plate
Heat olive oil in a large skillet
Cook patties for about 3 minutes on each side or until golden brown

Cajun Stuffed Chicken

This was soooo amazing and a nice way to change it up. I don't bake chicken too often but it was so cold outside that having the oven on was a nice way to make the apartment nice and warm. I will warn you this is pretty spicy so you might want to cut down the Cajun seasoning.

The Fixin's
3-4 Chicken Breasts
4 Cups of Fresh Spinach
3/4 Cup Shredded Mozzarella Cheese
2 Tablespoons Olive Oil
2 Tablespoon Cajun Seasoning
1 Tablespoon Almond Flour or Breadcrumbs
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Let's Cook Dinner
Preheat oven to 350F
In a mixing bowl combine olive oil, Cajun seasoning, almond flour, salt, and pepper
Toss chicken in the mixture
Line a baking sheet with tin foil and grease it with olive oil or cooking spray
Place chicken on the baking sheet
Make a deep cut in the center of each chicken breast
In a skillet cook down spinach until it is soft
Remove from heat and stir in cheese until melted
Stuff the mixture into the chicken, letting the extra spill onto the sides
Bake for 35 minutes or until chicken is cooked through

Sausage Meatza Pizza

Remember the mexican meatza I made a few months ago? It is the best paleo pizza "crust" that I have made to date. We had a pound of sausage laying around and I thought maybe I could make a more traditional pizza using the same recipe! This was just as awesome and a great way to mix it up!


The Fixin's
1 lb Sausage
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Basil
1 Teaspoon Oregano
1 Teaspoon Parsley
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
2 Cloves Minced Garlic
1/2 Cup Marinna Sauce
1/2 Cup Cheese
10-12 Pepperonis

Let's Cook Dinner
Preheat oven to 400F
In a mixing bowl combine ground sausage and all seasonings
Form sausage into a ball and cut in half into two balls
Spray two 8 inch cake pans with cooking spray
Press sausage into the bottom of the cake pans to form an even, thin crust
Bake for 15 minutes
Remove from oven
Top with sauce, pepperoni, and cheese
Bake for 10- 15 more minutes

Baked Parmesan Chicken

This was awesome chicken. It was tasty, juicy, and so so yummy! I put the chicken into a plastic bad to marinate before I left for work and the Mr. had it baking when I came home. It was such a yummy smell! It may look like fried chicken but it's totally baked and has NO butter or oil! This one is a keeper!


The Fixin's
1 lb Chicken Breasts
1 Egg
1/2 Cup Milk
1 Package Italian Seasoning Mix
1 Tablespoon Lime Juice
2 Teaspoons Garlic Powder
1/2 Cup Almond Flour
1/2 Grated Parmesan Cheese

Let's Cook Dinner
Preheat oven for 400F
Whisk eggs and milk together in a large mixing bowl
Add Italian seasoning, lime juice, and garlic powder
Marinate chicken in this mixture for a few hours
***I put mine in a plastic bag
In a mixing bowl combine almond flour and grated Parmesan cheese
Toss chicken in the mixture
Bake for 30-40 minutes or until chicken is no longer pink

Crockpot Lemon Chicken

I have been seeing this meal all over pinterest and just wasn't sure about trying it. I found this review on Twenties Hacker after pinning it for a second time and just decided to give it a go. The Mr. and I LOVED it. It was so easy to make and the Mr. threw it in the crockpot over his lunch hour. The lemon was such a nice flavor but it wasn't overwhelming.


The Fixin's
1 lb Chicken Breasts
1/2 Cup Lemon Juice
2 Cloves Garlic
1 Package Dry Italian Seasoning Mix
1 Tablespoon Butter
Fresh Spinach

Let's Cook Dinner
Place chicken in a greased crockpot
Place tablespoon of butter on top
In a mixing bowl combine lemon juice, garlic, and seasonings
Pour over chicken
Cook on low for 6-7 hours
Shred chicken and stir in the juice
Serve warm over a bed of spinach

Paleo Baked Cinnamon Apples

This was so so yummy. We had a few apples that were getting soft and I was really craving sweets. Since the oven was already on, I started looked for a baked apple recipe. I really couldn't find anything paleo, so this is my very own creation! I used Jenna's recipe as a guide and it turned out great!

4-6 Granny Smith Apples
2 Teaspoons Cinnamon
1/3 Cup Agave
1 Tablespoons Lemon Juice

Let's Cook Dinner
Preheat oven to 400F
Core apples
Cut into bite sized pieces
In a mixing bowl combine cinnamon, agave, and lemon juice
Add apples to the mixing bowl and stir until well combined
Grease a glass baking dish
Pour apples into baking dish
Bake for 35-40 minutes, stiring a few times

Paleo-ish Brownies

This was our special Valentines Day treat. I love PaleoOmg's recipes and this one did not disappoint. I have made paleo brownies before but these take the cake! They are soft, chewy, and best served warm. We had ours with ice cream! I'm calling it paleo-ish because of the chocolate chips but don't leave them out because they are awesome! Hope you had some yummy Valentines Day treats!

The Fixin's
1 Large Sweet Potato
3 Eggs
1/4 Cup Melted Coconut Oil
1/4 Cup Honey
1/4-1/2 Cup Chocolate Chips
3 Tablespoons Coconut Flour
2 Tablespoons Cocoa Powder
1/4 Teaspoon Baking Powder
1/4 Teaspoon Vanilla Extract
1/4 Teaspoon Cinnamon
Pinch of Salt
 
Let's Cook Dinner
Preheat oven to 350
Bake or microwave sweet potato until it's cooked and soft
Peel the sweet potato and mash it in a bowl
Whisk eggs
Add all other items
Stir until well combined
Grease an 8x8 pan
Bake for 30-35 minutes
Let cool

Sausage Stuffed Zucchini Boats

This meal was so so amazingly awesome! I have gotten in the habit of stuffing different types of veggies as a replacement for tacos shells or crescent rolls. This is so much healthier and to be honest a lot cheaper too! We love zucchini, we eat it a few times a week cooked in a skillet with olive oil. I have never tried it baked but after this meal I am going to look into it. This meal takes some time to prepare but it could totally be make ahead of time!


The Fixin's
4 Zucchini
1 lb Crumbled Sausage
8-10 Strips of Bacon
1/2 Cup Shredded Cheese
1 Can Rotel Tomatoes
**a fresh tomato and small chili pepper will work too**
Salt
Pepper

Let's Cook Dinner
In a skillet cook bacon until crisp
Chop into small pieces
Drain grease and add sausage to the skillet
Cook until brown
Drain grease
Stir in bacon and drained can of rotel
Set aside
Preheat oven to 375F
Leaving the stems on the zucchini, cut the zucchini in half length ways
Use a spoon to hallow out the middle of the "boats"
Place on a greased baking sheet
Fill with meat filling
Top with cheese
Sprinkle with salt and pepper
Bake for 30 minutes

Honey Lime Pork

I bought pork last week with no plans on how to cook it. I normally don't do that but I was in a hurry and well I figured that you can't go wrong with some pork. We used this same spice on chicken a while back and I really enjoyed it so I decided to adapt it for pork. That's the awesome thing about spices, they taste totally different if you just change the meat! This is easy and super yummy!

 
The Fixin's
1 lb Pork
1/4 Cup Lime Juice
1/4 Cup Olive Oil
2 Tablespoons Honey
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Chili Powder

Let's Cook Dinner
In a bowl mix honey, lime juice, olive oil, salt, chili powder, and pepper until well blended
Pour sauce over pork
Melt 2 tablespoons of butter in a large skillet
Cook chicken until no longer pink

****To freeze, place pork in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Blackened Tilapia

This was really yummy! I love this blackened seasoning that my mother in law uses BUT the only place that I can buy it is a Wal-mart and I DON'T love Wal-mart. I was hoping that this would be the same and it was pretty darn close! We got lots of snow today and had tons of fun playing in it!



 
The Fixin's
6-8 Tilapia Fillets
Olive Oil
1 Tablespoon Paprika
1 Tablespoon Cajun Seasoning
1 Teaspoon Basil
1 Teaspoon Cumin
1 Teaspoon Oregano
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Salt
1/2 Teaspoon Pepper
1/2 Teaspoon Crush Red Pepper

Let's Cook Dinner
 In a big mixing bowl combine all of the seasonings
Stir
Coat each side of the fillets in the seasonings
Heat olive oil in a large skillet
Cook each fillet for 3 minutes
Flip
Cook for another 3 minutes

I'm pretty sure that everyone has heard of mug cakes? Those wonderful little desserts that you can cook in the microwave? I love that they are single serving and so easy to make! After trying lots and lots of mug cakes, these two are my favorite, cookie in a cup, and chocolate cake in a cup!

Cookie in a Cup

The Fixin's
1 Tablespoon Butter
1 Tablespoon Granulated White Sugar
1 Tablespoon Brown Sugar
1/4 Teaspoon Vanilla Extract
1 Egg Yolk
1/4 Cup Flour
2 Tablespoons Chocolate Chips


Let's Cook Dinner
Melt butter in the bottom of your coffee cup
Stir in sugar, brown sugar, and vanilla
Add egg yolk
Stir
Add flour
Stir
Add chocolate chips
Microwave for 1 minute

3 Tablespoons of Flour

1 Tablespoon Sunflower Butter
1 Egg

Whisk egg in a coffee cup
Stir in cocoa powder, sunflower butter, egg, and cinnamon
Microwave for 1 to 2 minutes

Salmon Cakes

They say that runner's need a lot of protein and I am pretty sure that even though we eat meat almost every day, I am not getting enough. I know for a fact that I don't get enough protein at lunch and it always leaves me hungry for cookies or candy while I'm in class. I love tuna cakes but they take a while to make and I am not the best a frying things so I was pretty happy to see a baked version. The added veggies is a nice bonus too. Overall I thought these were great. They were easy to cook and stored great for lunch this week!


The Fixin's
1 14oz Can Salmon
1/2 Cup Almond Flour (or bread crumbs if you don't follow paleo)
2 Eggs
1/3 Cup Milk
1 Zucchini
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder

Let's Cook Dinner
Preheat Oven to 350F
Grease an 8 hole muffin tin
In a food processor, shred zucchini until it is fine
Drain salmon
In a mixing bowl combine salmon, flour, eggs, milk, zucchini, and seasoning
Mix with hands until well combine
Form in balls and place in muffin cups
Bake for 25 minutes

Bacon Egg Bites

After having some great success with baking eggs in the oven and wrapping them in turkey the Mr. asked if we could try bacon. I love bacon so of course I gave it a shot. These are so yummy and it's really easy!

12 Slices of Bacon
12 Eggs
Garlic Salt
Pepper

Let's Cook Dinner
Grease Muffin Baking Sheet
Preheat oven to 350
Place one slice of bacon around each muffin cup
Crack one egg into each cup
Top with pepper and garlic salt
Bake for 25 minutes

Updated Easy Paleo Chicken Parm

Remember Easy Paleo Chicken Parm? Well we had it for dinner again last night and I made some updates to what was already an awesome recipe! This time I pan fried the almond flour on the chicken before I baked it to create a crust. I also added more spices! The Mr. said it tasted great and it was a perfect dinner for a snowy winter night!

Turkey Egg Cups

This was pretty great! I loved the eggs that I made last week but wanted to add more protein and make it more of a meal. I don't like ham (per the Fit Sugar recipe) so I changed it to turkey and it was super yummy. Make sure to grease your muffin tins a lot or it will get stuck!

12 Slices of Deli Turkey
12 Eggs
Garlic Salt
Pepper

Let's Cook Dinner
Grease Muffin Baking Sheet
Preheat oven to 350
Place one slice of turkey on the bottom of each muffin cup
Crack one egg into each cup
Top with pepper and garlic salt
Bake for 20 minutes

Mexican Bell Peppers

These were super yummy! One of my biggest fears about cutting out bread was that I would not be able to eat fun stuff like tacos ever again! We that's so not true! After loving the Mexican mushrooms, I decided to try my hand at bell peppers. This way you get the taste and feel of a taco but with way more veggies!


The Fixin's
3 Bell Peppers
1 lb Ground Beef
1 Package Taco Seasoning
1 Can Rotel
1 Cup Shredded Cheese
1 Cup Spinach Leaves

Let's Cook Dinner
In a skillet cook ground beef and drain the fat
Add taco seasoning per directions
Drain Rotel and stir into the beef until combined
Preheat oven to 400F
Wash bell peppers
Cut in half and seed
Line with spinach leaves
Top with a few tablespoons of meat mixture
Top with cheese
Bake for 25 minutes on a baking sheet or until peppers are soft

Baked Mozzarella Sticks

This is why I should not be left alone with Pinterest. After a week of being sick and I found myself craving horrible for me fried food. Luckily no one has ever let me purchase a deep fryer and there more than an inch or snow on the ground which means I am staying inside! These were so so yummy. Once I put them in the freezer, it was really hard to wait for them to freeze BUT according to the directions you can't skip the part or the cheese sticks just melt. In other news, we finally got some snow and had some fun with our new snowman decorating kit!




The Fixin's
12 String Cheese Sticks
2 Tablespoons Flour
2 Tablespoons Grated Parmesan Cheese
1 Cup Breadcrumbs
1 Teaspoon Parsley
2 Eggs
Cook Spray

Let's Cook Dinner
Preheat oven to 400F
Cut mozzarella sticks in half
Put in gallon freezer bag and freeze for (at least) 2 hours
Beat eggs in a mixing bowl
Put two tablespoons of flour in a separate mixing bowl
Put grated Parmesan cheese, breadcrumbs, and parsley
Line a baking sheet with tin foil
Spray with cooking spray
Cover each stick with flour, then egg, then breadcrumb mixture
Place on baking sheet
Bake for 5 minutes
Flip
Bake for an additional 2-4 minutes
**watch closely to make sure they don't melt.

Banana Fluff Ice Cream

Um I almost didn't want to share this recipe because I was having dreams of how I could make millions by packaging this up and selling it in stores. Seriously guys, it's THAT good. I have been feeling sick for the past week and not eating very much food besides the Korean Beef that I made on Monday and some left over Avocado Pudding but when I saw this recipe I had to make it. Like the original author, I am bad at bananas. I always buy them and they always go bad before I can eat them all so in addition to this being amazing, it's a great use for ripe bananas. Also, when making this recipe DO NOT skip any steps. If you don't freeze the banana's it won't work. I put mine in the freezer before I went to school. This picture just doesn't do it justice. Check out the pictures on the links above!

The Fixin's
4 Ripe Banana's
2 Tablespoons Agave or Honey
2 Tablespoons Sunflower Butter (Peanut Butter or Almond Butter will also work)
1 Tablespoon Cocoa Powder

Let's Cook Dinner
Peel the bananas and cut into small bite sized pieces
Put in a plastic freezer bag and freeze for at least 2 hours
Place frozen bananas into a food processor
Blend the bananas until smooth
**you will need to scape the sides and stir the mixture, it takes a while**
Add agave, sunflower butter, and cocoa powder
Blend until smooth
Enjoy (you might want to put it back in the freezer for a while before eating)
Store in the freezer in an airtight container for up to 4 days
***It might get hard if the freezer, if this happens put it in the microwave for 15 seconds

Easy "Fried" Eggs

I have been really into fried eggs these days. How easy is it to crack an egg into a pan, wait, flip, wait then eat! My favorite kind of meal right? Well now that school is back in session I am having trouble finding time to even cook something as easy as that...soooo I found these babies on pinterest and they are perfect! So easy and yummy and kind of like a fried egg. I know a lot of people have been making these and then putting them in breakfast sandwiches which sounds pretty awesome too! 12 Eggs
1 Cup Fresh Spinach
Garlic Salt
Pepper

Let's Cook Dinner
Grease muffin baking sheet
Preheat oven to 350
Place 2 or 3 spinach leaves on the bottom of each muffin cup
Crack one egg into each cup
Top with pepper and garlic salt
Bake for 20 minutes

Paprika Chicken

 This was soooo yummy and super easy! I have had a few misses lately with chicken so it was great to have a hit! The orginal recipe call called for garlic salt, which I didn't have soooooo if you want to make your life super easy all you need is chicken, paprika, olive oil, and garlic salt! Amazing! Also, we gobbled this up so fast there are NO pictures!

The Fixin's
1 lb Chicken
2 Tablespoons Paprika
1 Teaspoon Garlic Powder
1 Teaspoon Parsley
3/4 Teaspoon Salt
1/4 Cup Olive Oil
 
Let's Cook Dinner
Cut chicken breasts into bite sized pieces
In a mixing bowl combine olive oil, paprika, garlic powder, parsley, and salt
Toss chicken in sauce until covered
Place chicken in skillet with 2 tablespoons of butter
Cook until no longer pink

****To freeze, place chicken in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Avocado Chocolate Pudding

Um....why did I not know about this???!!! Seriously, chocolate pudding made out of an avocado?! I love avocados but even I could not see how this was going to work. On a whim I though that I would try it and I am so glad I did. This is even better than  paleo ice cream and so much easier to make. Just trust me on this and try it!


The Fixin's
2 Avocado's
2 Tablespoons Agave
2 Tablespoons Coconut Oil
3 Tablespoons Milk
1/4 Cup Cocoa Powder
1 Teaspoon Vanilla Extract

Let's Cook Dinner
Melt coconut oil
Remove pit from avocado
Add avocado, agave, oil, milk, cocoa powder, and vanilla into food processor
Mix until smooth
Chill for 3o minutes
Serve or store for one week

Hawaiian Burgers

This was super awesome! This week is crazy as the new school semester begins and the Mr. is getting started on all his many spring business trips! This is a perfect meal to make together and share! As always, I had a bit of trouble keeping the burgers together in the skillet but it worked out. I think it's a me problem!


The Fixin's
1 lb Ground Beef
4 Pieces of Bacon
1/4 Cup BBQ Sauce
1 Pinapple

Let's Cook Dinner
In a skillet cook bacon until crisp
Finely chop bacon
1n a mixing bowl combine beef, BBQ sauce, and bacon
Form into patties
Pour small amoutn of olive oil, salt, and pepper into a skillet
In a skillet over medium high heat, cook burgers until done
Remove burgers
Core pinapple
Sear pinapple in skillet

Sweet and Spicy Bacon Wrapped Chicken

Ok maybe I am becoming the crazy bacon lady but I just can't get over how awesome these recipes are. They are a nice change to the traditional chicken and pork meals that I cook most night and a very special treat. I think the recipe was originally for the grill but it turned out great. The glaze is very sticky but just work with it and it should cover all your pieces of chicken. Also make sure your baking sheet had a lip on it, mine produced a good amount of liquid when it was cooking!

 
The Fixin's
1 lb Chicken
1 Package Bacon
3 Tablespoons Olive Oil
3 Tablespoons Honey
2 Teaspoons Chili Powder
2 Teaspoons Garlic Powder
1 Teaspoon Pepper
1/2 Teaspoon Salt

Let's Cook Dinner
Preheat oven to 400F
Cut chicken breasts into 1/4's
Wrap each piece of chicken with one or two pieces of bacon
Place in a greased baking dish
In a mixing bowl combine honey, olive oil, chili powder, garlic powder, salt, and pepper
Coat top and bottom of chicken with the mixture
Bake for 20 minutes
Flip over
Bake for 15 minutes or until chicken is not longer pink

Banana Pancakes

Want a super fast and yummy breakfast? These are so yummy. The Mr. wanted pumpkin pancakes but we did not have all the fixin's and I had a few bananas on the shelf that really needed to be eaten so we went in search of a banana pancake recipe. This was easy and yummy!

The Fixin's
2 banana's
3 eggs
1 Teaspoon Cinnamon
2 Tablespoons Coconut Flour
2 Tablespoons Agave or honey

Let's Cook Dinner
In a mixing bowl whisk eggs
Add cinnamon, coconut flour, and agave
In a different bowl, mash bananas until they are mushy
Add to egg mixture and stir
Heat butter or oil in a skillet
Drop large spoonfuls of bater on the skillet
Cook for several minutes on each side

Mexican Meatza

This was sooooo sooo good! I LOVE pizza and I love finding paleo pizza ideas even more. This is not a traditional pizza but rather a Mexican spin off. A taco pizza, this might be love!

 

The Fixin's
1 lb Ground Beef
2 Teaspoons Chili Powder
1/2 Teaspoon Cumin
1/2 Teaspoon Paprika
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
2 Cloves Minced Garlic
1 Green Bell Pepper
1/2 Cup Salsa
1/2 Cup Cheese
10-12 Pepperonis
1 Avocado

Let's Cook Dinner
Preheat oven to 400F
In a mixing bowl combine ground beef, chili powder, cumin, paprika, salt, pepper, and minced garlic
Form ground beef into a ball and cut in half into two balls
Spray two 8 inch cake pans with cooking spray
Press ground beef into the bottom of the cake pans to form an even, thin crust
Bake for 15 minutes
While the meat is baking chop avocado and bell pepper
Remove from oven
Top with salsa, pepperoni, cheese, bell pepper, and avocado
Bake for 10 minutes
