Paleo Brownie's

Adapted From: My Mother-in-Law

Yes, paleo brownie's! We have been making so much fun stuff this holiday and I am happy to report that it's all paleo! These are yummy. They don't taste like normal brownies but have a much more dark chocolate taste.

 
The Fixin's
6 Tablespoons Coconut Oil
1/2 Cup Honey
2 Eggs
1/2 Cup Coco
1/2 Cup Coco Nibs
1/2 Cup Almond Flour
1/2 Cup Arrowroot

Let's Cook Dinner
Preheat oven to 350F
Combine all fixin's
Pour into 8 x 8 pan
Bake for 20 minutes

Paleo Chicken Nuggets

These were super yummy! I have made homemade chicken nuggets a few times and it's a really fun meal! Paleo chicken nuggets proved to be no different! Almond flour really is a life saver, it's thicker than regular flour and acts like breadcrumbs.

The Fixin's
1 lb Chicken
2 Eggs
1 Cup Almond Flour
3 Tablespoons Arrowroot Powder
1/2 Teaspoon Cumin
1/2 Teaspoon Paprika
1 Teaspoon Garlic Powder
1/4 Teaspoon Salt
1/4 Cup Olive Oil

Let's Cook Dinner
Preheat oven to 450F
Cut chicken in bite sized pieces
In a bowl beat eggs and combine with arrowroot powder and spices
In a separate bowl pour almond flour
Dip chicken pieces into eggs mixture
Shake off excess and dip into almond flour mixture
Place on greased baking sheet lined with tin foil
Brush with olive oil
Bake for 10 minutes
Turn, brush with olive oil
Bake for 10 minutes

Coconut Banana Muffins

I seriosuly cannot believe that these are paleo! Not only do they taste super yummy, they were sweet and very soft. We topped ours with sunflower butter to add some extra protein and make it more filling! The holidays are the time for baking and I am so excited to have found some things that find within paleo and are yummy! Make sure to use very ripe banana's, it will help the mixture bake. Our's were almost brown!

The Fixin's
5 Eggs
2 Bananas
1/2 Cup Coconut Flour
1/4 Cup Coconut Oil (or butter)
1 Teaspoon Arrowroot Powder
1 Teaspoon Baking Soda
1 Teaspoon Vanila

Let's Cook Dinner
Preheat oven 350F
Mash banana's
In a mixing bowl beat eggs
Combine all fixin's until well blended
Grease muffin tins
Bake for 13-18 minutes

Squash Casserole

My favorite holiday dish is my mom's squash casserole. I found this recipe when I was giving it my all trying to find a recipe for Thanksgiving. I was nervous but it turned out great! If you want a paleo alternative, this is it!
 
The Fixin's
6 Yellow Squash
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1/2 Teaspoon Cayenne Pepper
1 Cup Almond Flour
2 Cups Cheese
1/4 Cup Milk
4 Eggs
4 Tablespoons Butter

Let's Cook Dinner
Preheat oven to 375F
Slice squash
Steam in a steamer until very tender
Remove from steamer and smash
In a mixing bowl combine eggs, milk, and seasonings
Add 1.5 cups of cheese and 1/2 cup almond flour to the mixing bowl
Add squash
Stir until well combine
Pour into a greased casserole dish
Top with 1/2 cup almond flour and 1/2 cup cheese
Melt 4 tablespoons of butter and pour on top
Bake for 35 minutes

Crockpot Chicken Tortilla-less Soup

This is amazing! Need a nice easy soup? This is the ticket! Things have been really crazy around the Moore household, the holidays are getting closer, the semester is starting to come to a close, and well we are just very busy! Nothing beats a super easy Crockpot soup!

The Fixin's
2 lb Chicken Breasts
32 oz Can Chicken Broth
2 Tablespoons Olive Oil
1/4 Cup Lime Juice
4 Cloves Minced Garlic
2 Teaspoons Chili Powder
2 Teaspoons Cumin
1 Teaspoon Garlic Powder
4 oz Can Diced Green Chillies
15 oz Can Diced Tomatoes
2 Cups Chopped Veggies (Squash, Zucchini,Cauliflower)
1 Avocado

Let's Cook Dinner
In Crockpot mix chicken broth, olive oil, lime juice, minced garlic, chili powder, and cumin, garlic powder until blended
Place chicken in Crockpot
Add diced tomatoes, green chillies, and chopped veggies
Cook on low for 8 hours
Shred chicken with a fork
Stir
Top with chopped avocado

Sunflower Butter Chicken

Remember peanut butter chicken? It was pretty awesome right? Well it wasn't exactly Paleo...so I thought I would give sunflower butter a try! The result was the same, awesome!


The Fixin's
1 lb Chicken
2 Tablespoons Olive Oil
1 Tablespoon Soy Sauce
3 Tablespoons Sunflower Butter
3 Tablespoons Ketchup
2 Tablespoons Butter

Let's Cook Dinner
In a bowl mix olive oil, soy sauce, sunflower butter, and ketchup until well blended
Cut chicken into bite sized pieces
Pour sauce over chicken

Melt 2 tablespoons of butter in a large skillet
Cook chicken until no longer pink

****To freeze, place chicken in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Taco Chicken

This was awesome and super spicey. I really must be in a taco mood these days because I keep trying to find paleo taco meals. BBQ might not be paleo, I think it has sugar in it but I am sure you can make your own "paleo style".

The Fixin's
1 lb Chicken
3 Tablespoons Taco Seasoning
1 Tablespoon Oregano
2 Tablespoons Olive Oil
1/4 Cup Salsa
1/4 Cup BBQ Sauce
1/2 Teaspoon Cumin
2 Tablespoons Chili Sauce

Let's Cook Dinner
In a bowl mix olive oil, salsa, BBQ sauce, chili sauce, cumin, oregano, taco seasoning until well blended

Cut chicken into bite sized pieces
Pour sauce over chicken

Melt 2 tablespoons of butter in a large skillet
Cook chicken until no longer pink

****To freeze, place chicken in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Pumpkin Paleo Pancakes

I didn't want to eat eggs this morning before my long run and stared into the fridge to see what I could come up with. Lucky for me, the cat has been having an upset tummy the past few days and we had bought some pumpkin puree to add to his food. Side note, this works wonders. So I used what we had left to make these wonderful pancakes. Yes, I know they don't taste exactly like "real" pancakes, they are a bit softer but they do the trick!

The Fixin's
1/2 Cup Pumpkin Puree
4 Eggs
2 Tablespoons Coconut Flour
2 Tablespoons Butter
2 Tablespoons Honey
1 Teaspoon Vanilla Extract
1/4 Teaspoon Baking Soda
1 Teaspoon Cinnamon
Pinch of Salt

Let's Cook Dinner
Whisk eggs
Add pumpkin, melted butter, honey, and vanilla extract
Stir until smooth
Add flour, baking soda, and cinnamon
Grease a skillet with butter or olive oil and heat on medium heat
Spoon batter into skillet, desired size, should be small
After about 2 minutes, flip
Serve with honey

Sausage and Peppers

I wanted to make sausage and sauerkraut but the Mr. wouldn't go for it. On Friday we went to store to pick up a few missing items and red bell peppers were on sale, so I decided to make this recipe up. It was super yummy and I saw many similar recipes on pinterest. If you have some picky eaters in your house, this meal should do the trick.


The Fixin's
2 lb Kielbasa Sausage
3 Bell Peppers
3 Cups Fresh Spinach
3 Cloves Mince Garlic
1 Cup Marinara Sauce

Let's Cook Dinner
Chop sausage into bite sized pieces
In a skillet cook the sausage
Chop bell peppers and spinach
In a different skillet, cook bell pepper and minced garlic in a small amount of olive oil
Add spinach in the last minute
Combine sausage and veggies
Top with marinara sauce

Pinterest Pork

I found this recipe on pinterest and couldn't think of a name, so pinterest pork it is! This was my OH MY GOSH it's Saturday and there is nothing in the house except pork in the freezer meal and it turned out sooo yummy. If you lemon juice, add a little more. It has a slight tang but is not super strong.



The Fixin's
1 lb Pork Chops
1/4 Cup Olive Oil
1/4 Soy Sauce
1/4 Red Wine Vinegar
1 Tablespoon Lemon Juice
1 Tablespoon Worcestershire Sauce
1 Tablespoon Parsley
1 Teaspoon Pepper
4 Cloves Minced Garlic

Let's Cook Dinner
In a bowl mix olive oil, soy sauce, red wine vinegar, lemon juice, worcestershire, parsley, pepper, and garlic until well blended

Pour sauce over pork

Melt 2 tablespoons of butter in a large skillet
Cook pork until no longer pink

****To freeze, place pork in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Lemon Pepper Pork

I will be the first time admit that I miss all the recipes from Plain Chicken since we started eating Paleo. I read her blog everyday and my mouth drools for all her yummy treats! The one thing she does do that is Paleo is grill recipes, she is always coming up with something yummy to cook the meat it. Now given that it's already winter time here is Wisconsin we are not grilling, but I this recipes work great in the skillet!


The Fixin's
1 lb Pork Chops
1/4 C Soy Sauce
2 Tablespoons Worcestershire Sauce
1/4 Cup Olive Oil
3 Tablespoons Lemon Pepper Seasoning
2 Cloves Minced Garlic

Let's Cook Dinner
In a bowl mix soy sauce, worcestershire, olive oil, lemon pepper seasoning, and minced garlic until well blended
Pour sauce over pork

Melt 2 tablespoons of butter in a large skillet
Cook pork until no longer pink

Perfect Chicken

I found this recipe on Pinterest and the pinners called it the perfect chicken and I don't think I would argue. It was simple and tasty. This would be the perfect chicken to cook and add to any pasta dish but we just ate it alone. It seems simple but it had tons of flavor and the outside got a crispy.

1 lb Chicken
1 Tablespoon Olive Oil
1 Teaspoon Pepper
1 Teaspoon Salt
1 Teaspoon Paprika

Pepper Lime Pork

Remember the pepper lime chicken we made a few weeks ago? Well I liked it so muhc that I decided to try it with pork and I think I might like this even better! Aldi had pork chops on sale this week so we stocked up and made a few changes to the weekly menu. The lime flavor is not a intense as it is on the chicken but gives it a stuble, tangy flavor!

The Fixin's
1 lb Prok
1/4 Cup Lime Juice
2 Cloves Minced Garlic
1 Teaspoon Pepper
1 Tablespoon Olive Oil
1 Teaspoon Basil
1/4 Teaspoon Salt
2 Tbalespoons of Butter

Let's Cook Dinner
In a bowl mix lime juice, garlic, pepper, olive oil, basil, and salt until well blended

Pour sauce over pork

Melt 2 tablespoons of butter in a large skillet
Cook pork until no longer pink
