Paleo Fried Chicken

This was soooooooo good. It was spicy and crunchy and all things wonderful! The Mr. inhaled his plate and asked that we make it again. I think this will defiantly be making another appearance soon. I cut my chicken breasts into halves because they were huge. I also think it helped it cook a little faster!

The Fixin's
1 lb Chicken Breasts
2 Eggs
1 Tablespoon Olive Oil
1 Cup Almond Flour
1 Teaspoon Paprika
1 Teaspoon Garlic Powder
1 Teaspoon Cajun Seasoning
1/2 Teaspoon Basil
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Let's Cook Dinner
Preheat to 400F
Whisk eggs in a mixing bowl
In a large bowl combine almond flour, paprika, garlic powder, cajun seasoning, basil, salt, and pepper
Dip chicken into egg mixture and then into dry mixture
Heat olive oil in large pan
Brown chicken on both sides in the frying pan for about 3 minutes each side
Place in greased baking dish
Bake for 20 minutes or until chicken in no longer pink
