Garlic Chicken Legs

This meal was awesome! The chicken was fall of the bone tender and tasted great as left overs! The Fixin's
2 lbs Chicken Legs
12 oz Tomato Sauce
1 Cup Soy Sauce
1/4 Cup Brown Sugar
4 Cloves Minced Garlic

Let's Cook Dinner
In a bowl, combine tomato sauce, soy sauce, brown sugar and minced garlic
Spray crockpot with non-stick cooking spray
Place chicken in crockpot
Pour sauce over chicken
Cook on low for 6 hours

Chicken Sausage Cacciatore

This was super yummy and the perfect weeknight meal. I love coming home at lunch and throwing something in the Crockpot. I also loved the idea of combining chicken and sausage, it gave the meal and wonderful flavor! We used green bell peppers but next time I am going to splurge for multi-colored. I had to take a picture of the left overs as the Mr. was eating because we ate dinner so fast!


The Fixin's
.75 -1 lb Chicken
1 Package Italian Sausage Links
3 Bell Peppers
1 Package Sliced Mushrooms
2 Cups Tomato Sauce
1 Teaspoon Oregano
1 Teaspoon Basil
1 Teaspoon Parsley
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder

Let's Cook Dinner
Grease Crockpot
Place chicken and sausage on the bottom
Top with mushrooms and sliced bell peppers
In a bowl combine sauce and seasonings
Pour into crockpot
Cook on high for 4 hours
Remove meat and slice
Put back in Crockpot and stir
Serve

Crockpot Pesto Chicken

Ever since I found crockpot lemon chicken, I have be keeping my eye out for easy crockpot recipes that can be served over a bed of spinach. Eating paleo and the crockpot don't often mix but I got lucky with one! As we finally get some summer like weather here in the mid-west, I'll be looking for ways to avoid using the oven and I think this meal will make a regular appearance! We topped ours with a little bit of grated parmesan cheese and served it over a bed of spinach. I'm thinking mash potatoes would be great too!


The Fixin's
1-2 lb Chicken Breasts
6 oz Pesto
1/2 Chicken Broth
1 Packet Ranch Dressing Seasoning (or 1/4 cup homemade)

Let's Cook Dinner
Grease crockpot
Add pesto, chicken broth, and ranch seasoning
Stir until well combined
Add chicken to pot and coat in sauce
Cook for high for 4 hours
Shred chicken and stir in sauce
Serve over spinach (or mash potatoes!)

BBQ Pork Tenderloin

This meal was a life saver! We have been so busy this week and will be every week until finals are over...or I collapse which ever happens first! It was nice to throw this in the crockpot right before class and have it ready when I got home. It is super simple and perfect for when you have no idea what to cook for dinner!


The Fixin's
2-3 lb Pork Tenderloin
2 Cups BBQ Sauce
1 Cup Water
1 Teaspoon Pepper
3 Cloves Minced Garlic

Let's Cook Dinner
Spray your crockpot with cooking spray
Place pork tenderloin in the bottom of the pot
In a mixing bowl combine water, bbq sauce, pepper, and garlic
Pour sauce over pork
Cook on high for 4 hours

Crockpot Lemon Chicken

I have been seeing this meal all over pinterest and just wasn't sure about trying it. I found this review on Twenties Hacker after pinning it for a second time and just decided to give it a go. The Mr. and I LOVED it. It was so easy to make and the Mr. threw it in the crockpot over his lunch hour. The lemon was such a nice flavor but it wasn't overwhelming.


The Fixin's
1 lb Chicken Breasts
1/2 Cup Lemon Juice
2 Cloves Garlic
1 Package Dry Italian Seasoning Mix
1 Tablespoon Butter
Fresh Spinach

Let's Cook Dinner
Place chicken in a greased crockpot
Place tablespoon of butter on top
In a mixing bowl combine lemon juice, garlic, and seasonings
Pour over chicken
Cook on low for 6-7 hours
Shred chicken and stir in the juice
Serve warm over a bed of spinach

Crockpot Chicken Tortilla-less Soup

This is amazing! Need a nice easy soup? This is the ticket! Things have been really crazy around the Moore household, the holidays are getting closer, the semester is starting to come to a close, and well we are just very busy! Nothing beats a super easy Crockpot soup!

The Fixin's
2 lb Chicken Breasts
32 oz Can Chicken Broth
2 Tablespoons Olive Oil
1/4 Cup Lime Juice
4 Cloves Minced Garlic
2 Teaspoons Chili Powder
2 Teaspoons Cumin
1 Teaspoon Garlic Powder
4 oz Can Diced Green Chillies
15 oz Can Diced Tomatoes
2 Cups Chopped Veggies (Squash, Zucchini,Cauliflower)
1 Avocado

Let's Cook Dinner
In Crockpot mix chicken broth, olive oil, lime juice, minced garlic, chili powder, and cumin, garlic powder until blended
Place chicken in Crockpot
Add diced tomatoes, green chillies, and chopped veggies
Cook on low for 8 hours
Shred chicken with a fork
Stir
Top with chopped avocado

White Chicken Chili

This is the perfect fall chili! We made it last winter and I was so excited that it was "cool enough " this week to start making soups and chili's again! I love regular chili but this is a very nice change. It is also very very easy! I have seen it floating around Pinterest as a great football tailgating food!


The Fixin's
1 - 2 lb Chicken
1 Can Black Beans
1 Can Corn
1 Can Rotel
1 Package Ranch Dressing Seasoning
1 Teaspoon Cumin
1 Tablespoon Chili Powder
1 Teaspoon Onion Powder
8 oz Cream Cheese

Let's Cook Dinner
Spray Crockpot with cooking spray
Place Chicken in the bottom of the CrockPot
Pour in undrained corn, undrained rotel, and black bean that are drained and rinsed
Top with seasonings
Stir
Place block of cream cheese on top
Cook on low for 6 hours
Stir
Shred chicken
Stir and serve

Beef Boomers

I got the idea for these beef sandwhichs from the Peperoncini Pork Sandwhichs we made back in May. It's almost the same sandwhich but tastes totally different! I froze some of the stew meat from last week's beef tips and rice and this was the perfect use for the left over beef tips!


The Fixin's
1 lb Stew Meat
1 Packet Dry Gravy Mix
Sliced Pepper Jack Cheese
French Rolls
1-2 Bell Peppers

Let's Cook Dinner
Cook stew meat in the Crockpot on low for 8 hours
Skim fat, shred meat, and stir in gravy mix
Dice bell peppers and cook for 2 to 3 minutes in a small skillet
Spoon beef and peppers onto a french roll
Top with one slice of cheese
Boil or bake for 5 minutes until cheese is melted and roll is crisp

Chicken Spaghetti

I LOVE this meal. I was looking for a white chicken spaghetti and came across these two recipes. The combination produced an awesome dinner that not only cooks in the Crockpot but makes tons of left overs! We use baby bella mushrooms but any type of fresh mushroom should do!

The Fixin's
1 lb Chicken
8 oz Fresh Mushrooms
1 Can Cream of Chicken Soup
4 Tablespoons Butter
1 Package Italian Salad Dressing Mix
1/2 Cup Chicken Broth
8 oz Cream Cheese
1 Tablespoon Onion Powder
1 Clove Minced Garlic
1 lb Spaghetti

Let's Cook Dinner
Spray Crockpot with cooking spray
Cut mushrooms in half or quaters and place on top of chicken
Place butter, soup, cream cheese, chicken broth, garlic, onion powder, and italian dressing seasoning in a skillet
Cook on low heat until well blended and cream cheese is melted
Pour mixture over chicken and mushrooms
Cook on low for 6 hours
Cook spaghetti according to directions
Remove chicken and shred
Stir chicken back into Crockpot
Stir cooked spaghetti into Crockpot

Honey Chicken

This is one of my favorite meals. It was the first "Chinese" like meals that I tried in the Crockpot and I LOVE it. I would cook it once a week if the Mr. would let me! Because the sauce is thick, you can't leave it cooking all day long but when you cook it on high it only require an hour and a half. I like to cook it on the weekends when I am running around the house. It really does taste as good as it smells!


The Fixin's
1 lb Chicken
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/2 Cup Honey
1/4 Cup Soy Sauce
1/8 Cup Chopped Onion
1/8 Cup Ketchup
1 Tablespoon Olive Oil
1 Clove Minced Garlic
1/4 teaspoon Red Pepper Flakes
Rice

Let's Cook Dinner
Spray Crockpot with cooking spray
Place chicken in Crockpot and season with salt and pepper
In a mixing bowl combine honey, soy sauce, onion, ketchup, oil, garlic and red pepper flakes
Pour over chicken
Cook on low for 3 hours or high 1.5 hours
Remove chicken and cut into small pieces
Mix back into sauce
Serve over rice

Coke BBQ

Plain Chicken really does post the best recipes. I have tried pork with Dr. Pepper and Root Beer but never thought about cooking with Coke, much less using it to make my own homemade BBQ Sauce. I feel really fancy. This is a great meal, mainly because it is super easy! To cook the pork you only need TWO "fixin's"! That is my kind of meal. I'm sure that you could use store bought BBQ sauce but the Coke BBQ is to die for. It is totally worth the 45 minutes it takes to prepare. It might be a little late for the 4th of July but I'm sure you have a summer party coming up and this would be a great meal to serve!




The Fixin's
2-3 lb Pork Shoulder
16 oz Can of Coke
1 Onion
3/4 Cup Ketchup
2 Tablespoons Vinegar
2 Tablespoons Worcestershire Sauce
1/2 Teaspoon Chili Powder
1/2 Teaspoon Salt
Buns

Let's Cook Dinner
Place the pork in Crockpot
Pour 12 oz of coke over pork
Cook on low for 8 hours
Remove from Crockpot, drain, and shred
Serve with Coke BBQ sauce
Finley chop onion
Combine onion, 3/4 cup of coke, ketchup, worcestershire sauce, chili power, and salt together and stir until well mixed
Pour into a large skillet and bring to boil
Reduce to simmer, cover, and let simmer for 45 minutes
Stir occasionally
Serve over pork on buns

Chicken Cheddar Casserole

This meal reminds me of Thanksgiving! It's hardy, savory, and the cheddar cheese really makes the dish! I have been trying to avoide using the oven since the past couple of days have been very HOT and I was came across this meal when looking from Crockpot ideas. I think the last time we made it, we used cream of chicken soup but the recipe calls for cream of mushroom. I had that on hand, so we went with it and I don't think it tasted any different BUT if you hate cream of mushroom feel free to switch it up.
The Fixin's
1 lb Chicken
2 Cups Cheddar Cheese
1 Can Cream of Mushroom Soup
1/4 Cup Milk
2 Cups Stuffing Mix
1/4 Cup Butter

Let's Cook Dinner
Lightly grease Crockpot and spray with cooking spray
Place chicken breasts in pot
Top with cheese
Combine soup and milk in a small mixing bowl and stir until combined.
Spoon mixture over cheese
Pour the stuffing mix on top
Drizzle melted butter over stuffing mix
Cook on low for 6 hours
Shred chicken and stir with stuffing mix

Beef Tamale Pie

I am always looking for ways to mix up traditional Mexican food. We tend to get stuck eating soft or hard tacos because that's all I can think of when we are craving a quick meal. This tamale pie is great! My Mother-in-Law even made it for Raul and Kristen when she visited Japan and it got a thumbs up. The sweetness of the corn bread really gives it a unique flavor. We top ours with sour cream and salsa. I added another 1/2 a cup of cheese to the original recipe but other than that, no changes needed! The cooking time is really going to vary depending on your Crockpot. Ours was done right at 4 hours, but our Crockpot tends to run a bit hot. Just make sure you check the center every once in a while!

The Fixin's
1  lb Ground Beef
1 15 Oz Can Kidney Beans
1 10.5 Oz Can Enchilada Sauce
2  Teaspoons Garlic Powder
8.5 Oz Corn Bread/Muffin Mix
1/3 Cup Milk
1 Egg
2 Tablespoons Butter
1 Cup Cheddar Cheese

Let's Cook Dinner 
Brown ground beef, drain
Spray Crockpot with cooking spray
Place it into Crockpot
Stir in the drained kidney beans, enchilada sauce, and garlic powder
In a separate mixing bowl, combine the corn bread mix with milk, egg, and melted butter
Stir until mixed
Stir in the cheddar cheese
Spoon the corn bread mixture on top of the beef mixture
Cook on low for 4 to 5 hours or until bread is cooked through

Crockpot Orange Chicken

We have been working really hard at cooking at home and eating out no more than one meal a week. This hasn't been the easiest goal to achieve but most weeks we do a really good job. One of the things I frequently crave that I have never been able to cook at home is Chinese food. I am sucker for good, greasy hole-in-the-wall Chinese food, so when I found this recipe I was hopeful that it just might do the trick. Lucky for me, my health, and my wallet, this meal is awesome. It takes a little more prep this most Crockpot meals but it's still really easy! Be warned that the orange juice and brown sugar makes it SWEET but no more so than orange chicken at a Chinese place. Soy sauce on the side or on the rice helps cuts the sweet flavor.



The Fixin's
1 lb Chicken Breasts
1/3 Cup Flour
2 Tablespoons Olive Oil
1/2 Tablespoon Salt
1 Teaspoon Balsamic Vinegar
3 Tablespoons Ketchup
6 Oz. Frozen Orange Juice Concentrate
4 Tablespoons Brown Sugar
Rice

Let's Cook Dinner
Thaw orange juice
Cut chicken in small, bite sized chunks
In a bowl, mix orange juice, brown sugar, vinegar, salt, and ketchup together until well blended, set aside
Pour the flour in a small bowl
Cover the chicken breast chunks in flour and shake off the excess
Heat olive oil in a skillet over medium heat
Place chicken into skillet and cook until the outside is light brown

Spray crock pot with cooking spray
Place chiken into the bottom of the crockpot.
Cover the chicken with the sauce mixture and stir to combine
Cook on high for 2 hours
Serve over rice

Ranch Pork Chops

This meal makes a regular appearance in our house. I love it because it can be cooked in the Crockpot and because it only requires a few ingredients. We often buy pork chops with the intent to break out the grill, but one thing leads to another and we get too busy. This is the perfect way to enjoy pork chops without all the hassles. The original recipe only calls for one can of cream of chicken soup, but I use two. I think one can doesn't make enough gravy for the mashed potatoes. Real Mom Kitchen has a recipe for garlic mashed potatoes that looks wonderful but we just served these over the regular boxed kind and no harm was done. I will admit, this meal doesn't look very pretty when it's cooking but don't let that fool you, it tastes as wonderful as it smells!




The "Fixin's"
3 or 4 Pork Chops
1 packet dry Ranch Dressing Seasoning
1 tbsp Milk
2, 10 oz cans Cream of Chicken Soup




Let's Cook Dinner
Spray Crockpot with cooking spray
Place pork chops in Crockpot

Stir together soup straight from the can (without adding water), ranch dressing seasoning, and milk in bowl until smooth
Pour over pork chops



Cook on high heat for 4 hours or low heat for 6 hours
Serve over mashed potatoes

Hawaiian Chicken

Chef in Training is one of my favorite food blogs. She has so many easy recipe ideas and TONS of dessert ideas that I have to literally force myself not to try. One reason I love her blog is that she posts a good amount of Crockpot meals. This recipe can actually be cooked in the Crockpot but I didn’t get around to starting dinner early enough to try it. I opted to bake it in the oven and it was wonderful. The pineapple definitely makes this VERY sweet, but in a good way. I added the pineapple chucks per directions with about 20 minutes left in the baking process, I think it made the sauce a bit watery even though I drained it. I don't think it damaged the sauce but next time I will wait a bit longer.



The “Fixin’s”
4 to 6 boneless chicken breasts
1/2 cup ketchup
1/2 tsp. worcestershire sauce
1 tsp. yellow mustard
1/2 cup crushed pineapple with juice
1/2 cup brown sugar
1 can pineapple chunks, drained





Let’s Cook Dinner
Preheat oven to 350
Mix together ketchup, yellow mustard, brown sugar, worcestershire sauce, and crushed pineapple in small bowl
Place chicken in greased baking dish and cover with sauce




Bake at 350 for 45 minutes
**Crockpot: Cook on low for 4-6 hours**
Add drained pineapple chunks with 10 minutes left to bake
Remove chicken from pan and cut into small chucks
Stir into sauce, coating chicken and pineapple
Serve over white rice

Peperoncini Pork Sandwhich

You already know that I LOVE the crockpot and this meal was no exception. It’s so nice throw everything in before work and come home to the smell of dinner! A pub we frequent serves a sandwich known as “boomers” and when I came across this recipe I hoped and prayed it would taste similar so we would stop eating out! I was in luck, this meal is awesome. The Mr. has asked that it make a regular appearance in the meal menu. We substituted pork for beef and I seasoned it with some garlic, salt, and pepper. The original recipe suggests that mozzarella cheese would also be a good option. The pepperjack really adds a kick, so if you don’t like spicy it might be a good idea!


The “Fixins”
1-2 lbs. pork roast
1 jar peperoncini peppers
2 cloves garlic minced
Salt and peper to taste
Sliced Pepperjack Cheese
French rolls



Let’s Cook Dinner
Place pork roast in crock pot
Season with salt and pepper and minced garlic around top of pork
Pour jar of pepperoncini peppers on top of pork including the liquid


Cover and cook on low for 8 hours.
When pork is finished cooking shred meat and stir in juice


Set oven to broil. 
Cut french rolls in half and set on baking sheet. 
Spoon pork and pepper mixture onto bottom slice of roll.
Place on slice of cheese on top
Broil in oven until bread is crisp and cheese is melted.
