I am in love with egg cups. Since finding them on pinterest I have made ham egg cups, turkey egg cups , and bacon egg cups but these might be my favorite! Egg cups are so awesome because you can eat them on the go and are the perfect single serving! I normally grab two on Monday morning and eat them after I get to work! Be creative, there are so many ways to serve these!
The Fixin's
1 lb Crumble Sausage
12 Eggs
1 Cup Fresh Spinach
Garlic Salt
Pepper
Let's Cook Dinner
In a skillet cook the sausage and drain the fat
Grease a muffin tin
Preheat oven to 350
Chop spinach into small pieces
Place spinach in the bottom of each muffin tin
Spoon the sausage over the spinach
Crack one egg into each cup
Top with pepper and garlic salt
Bake for 25 minutes

Paleo Coco-Pumpkin Muffins

After my long run today I needed a snack and nothing was doing the trick. Sometimes I just really miss bread! We have had lots of success with other types of muffins (apple, sweet potato, banana) and I had a can of pumpkin the fridge that was screaming to be eaten. I added coco powder mainly because what I really wanted at that moment was a snickers bar but it did add a nice flavor. Next time I think chocolate chips would really do the trick! These are not too sweet and best served with some honey or almond butter on the side!
The Fixin's
1 Cup Pumpkin Puree
1/2 Cup Coconut Flour
4 Eggs
1/4 Cup Honey
2 Tablespoons Coconut Oil
1 Tablespoon Coco Powder
1 Tablespoon Flax Seed
2 Teaspoons Cinnamon
1 Teaspoon Vanilla
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
Let's Cook Dinner
Preheat oven to 400F
In a mixing bowl whisk eggs

Sweet Potato Muffins

The other night we both had a sweet tooth and really wanted to make sweet potato brownies...but we didn't have enough coco powder or any chocolate chips! So if we were going to keep ourselves from going to store and buying ice cream, we needed to be creative! These are super yummy and best when topped with nut butter or honey. They are sweet but not too sweet and totally could be eaten for breakfast! Next time I am going to try adding chocolate chips or raisins!

2 Large Sweet Potatoes (cooked & peeled)
1/2 Cup Coconut Flour
1/2 Cup Ground Flaxseed
1/4 Cup Honey
1 Tablespoon Nut Butter (almond or sunflower)
6 Eggs
1 Teaspoon Salt
1 Teaspoon Baking Soda
2 Teaspoons Vanilla
2 Teaspoons Cinnamon
Let's Cook Dinner
Preheat oven to 350F

This was pretty great! I loved the eggs that I made last week but wanted to add more protein and make it more of a meal. I don't like ham (per the Fit Sugar recipe) so I changed it to turkey and it was super yummy. Make sure to grease your muffin tins a lot or it will get stuck!

Easy "Fried" Eggs

Banana Pancakes

Want a super fast and yummy breakfast? These are so yummy. The Mr. wanted pumpkin pancakes but we did not have all the fixin's and I had a few bananas on the shelf that really needed to be eaten so we went in search of a banana pancake recipe. This was easy and yummy!

2 banana's
3 eggs
1 Teaspoon Cinnamon
2 Tablespoons Coconut Flour
2 Tablespoons Agave or honey
Let's Cook Dinner
In a mixing bowl whisk eggs
Add cinnamon, coconut flour, and agave
In a different bowl, mash bananas until they are mushy
Add to egg mixture and stir
Heat butter or oil in a skillet

Sausage and Egg Casserole

I had planned to cook this chorizo casserole for breakfast this week but Aldi was out of chorizo and I had to think on the fly. This was the next best thing and sure is a yummy adaptation! Since it is not as spicy as the chorizo casserole, this might be a great meal for out of town guests and kids!

12 eggs
1 lb Crumble Breakfast Sausage
1 Medium Sweet Potato
2 Tablespoons Hot Sauce
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Teaspoon Salt
1 Teaspoon Pepper
1/2 Cup Cheese
Let's Cook Dinner
Cook sausage over medium heat until crumbled
Preheat oven to 375F
Remove sausage from skillet
Peel and cube sweet potato
Cook sweet potato in skillet with remaining grease over medium heat, stirring occasionally
Cook until tender or about 15 minutes
In a mixing bowl, whisk eggs and mix with spices and hot sauce
Add sausage, cheese, and sweet potato to the mixing bowl
Bake in a baking dish for 20 to 25 minutes or until eggs are set

Meatza Egg Casserole

We made this for breakfast a weeks ago and it was so good. Better late then never right? Breakfast for most people is hard. I have found that the best way to make sure you eat a good breakfast is to cook it before hand. We always pick one or two recipes and make them on Sunday. That way when I am running around like a crazy person in the morning, there is something to eat!
The Fixin's
1 lb Breakfast Sausage
7 eggs
8 Slices of Bacon
1 Sweet Potato
1 Tablespoon Onion Powder
1 Clove Minced Garlic
Let's Cook Dinner
Preheat oven to 350F
Peel and dice sweet potato
In a skillet cook bacon, remove, let cool, and dice
Add sweet potato and minced garlic to skillet
Cook in bacon grease for 10 minutes
Place uncooked sausage into a large mixing bowl
Crack ONE egg on top of it
Add onion powder
Mix with you hands until egg and spices are blended
Grease a baking dish and "pour" meat/egg mixture into the dish
Cook for 10 minutes in oven
Remove from oven
Top with sweet potato
Crack the remaining 6 eggs on top
Sprinkle diced bacon over eggs
Bake for 10-15 minutes or until eggs are cooked to your desire

I seriosuly cannot believe that these are paleo! Not only do they taste super yummy, they were sweet and very soft. We topped ours with sunflower butter to add some extra protein and make it more filling! The holidays are the time for baking and I am so excited to have found some things that find within paleo and are yummy! Make sure to use very ripe banana's, it will help the mixture bake. Our's were almost brown!

2 Bananas

Sausage Egg Muffins

This was my contribution to breakfast this week but as you can see, I liked them so much that I ate one with my dinner! I cannot even describe how easy these were to make and store. I baked them Monday night then I put them in a plastic bag and left them in the fridge. Everyone morning I warmed two for 1 1/2 minutes in the microwave....awesome breakfast done! This was my contribution to breakfast this week but as you can see, I liked them so much that I ate one with my dinner! I cannot even describe how easy these were to make and store. I baked them Monday night then I put them in a plastic bag and left them in the fridge. Everyone morning I warmed two for 1 1/2 minutes in the microwave....awesome breakfast done! They are filling and full of protein. These are totally a keeper!
The Fixin's
1 lb Italian Sausage
1-2 Cups Chopped Broccoli 8 Eggs
1/4 Cup Milk
1/2 Tablespoon Olive Oil
1/2 Teaspoon Baking Powder
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1 Tablespoon Grated Parmesan Cheese
Let's Cook Dinner
Preheat oven to 375F
Cook sausage in a large skillet, drain fat
Chop broccoli into small pieces, add to skillet and stir
In a mixing bowl, whisk eggs, milk, and seasonings together
Spray a 12 hole cupcake pan with cooking spray
Spoon sausage broccoli mixture into each cup
Spoon egg mixture evenly into each cup
Sprinkle tops with additional parmesan cheese if desired
Bake for 15 to 20 minutes or until eggs are set and fluffy

Apple Muffins

Today is my 100th post of the year yall! I can't believe it! When we started Moore Family Food way back at the beginning of the year I wasn't even planning on making the blog public. I had tried blogging before and never really kept at it. It wasn't until I realize just how many of my friends and family learning to cook and looking for fun, cheap, and easy meal ideas! Thanks for all the support, kind words, and ideas! I can't take credit for these as the Mr. found the recipe and cooked them. People seem to think that when you eat Paleo you can't make fun things like muffins. Just use almond and coconut flower and BAM you have muffins!
The Fixin's
1 Large apple
1 Cup Almond Flour
3 Tablespoons Coconut Flour
3 Eggs
1/4 Cup Coconut Oil
2 Tablespoons Honey
1 Tablespoon Cinnamon
1/2 Teaspoon Baking Soda
Pinch of Salt
Let's Cook Dinner
Preheat oven to 350F
In a mixing bowl combine almond flour, coconut flour, cinnamon, baking soda, and a pinch of salt
Whisk eggs in a separate mixing bowl and pour into flour mixture
Melt coconut oil and add to mixture
Add honey and cinnamon
Mix until very well blended, the mixture will look dry but DON'T worry
Place batter in greased muffin pan
Bake for 25 to 30 minutes

This was the meal The Mr. made for us the eat for breakfast this week. It was so yummy. I am really enjoying all of the sweet potato and it really mixes well with the flavor. Instead of milk, we used coconut milk and it was such a nice change. To find coconut milk in your local store check out the oriental/ethnic food isle. Look for the soy sauce and it should be close by!

2 Sweet Potatoes
1 lb Sausage
1 Container Sliced Mushrooms
1/2 Cup Coconut Milk
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
6 Eggs
2 Tablespoons Olive Oil
2 Tablespoons Olive Oil
Let's Cook Dinner
Preheat oven to 375F
Cook sausage in a skillet
In pot heat 2 tablespoons of olive oil, add mushrooms
Cover and cook for 5 minutes, stir often
Peel and thinly slice sweet potato
In glass baking dish, cover bottom with a layer of sweet potatoes
Top layer with 1/3 of the mushrooms
Top mushrooms with a layer of 1/3 of the cooked, crumbled sausage
Top with a layer of sweet potatoes
Repeat
In a mixing combine coconut milk, garlic powder, onion powder, salt and pepper
Whisk until smooth and pour over dish
Cover with a tin foil
Bake for 30- 35 minutes
Let cool for 10 minutes
In a mixing bowl, whisk eggs
Scramble them in a skillet
Pour on top of cooled lasagna
Cover and cook for 5 minutes, stir often

OK, I know you guys are starting to think I am the crazy egg lady with all these weird ways to serve eggs but seriously...these are so good. Yes I am aware I claimed this about the avocado eggs and I stand by that statement but this meal takes eggs to a whole new level. The Mr. gets all the credit for finding and cooking this recipe. I have been happy to enjoy the fruits of his efforts all week long! These are perfect for people who are busy in the morning and need a quick meal. They can store for about a week in the fridge and need to be heated for about 1.5 minutes!

4 Eggs
3/4 lb Ground Sausage
Olive Oil
Let's Cook Dinner
Hard boil the eggs according to the following directions
Place eggs in a pot of water, enough water to just cover the eggs
Bring to boil
Once the water is boiling, turn off the heat
Cover the pot with a lid for ten minutes
Transfer the eggs into a mixing bowl filled with cold water
Peel eggs once they have cooled
Divide the sausage, uncooked, into four equal parts
With each 4th of sausage form a patty and wrap it around the egg
Repeat for all eggs
Preheat oven to 375F
Pour olive oil into a large skillet
Cook 2 eggs at a time for 8 minutes, rolling them around every few minutes so that all sides brown
Place in a baking dish
Bake for 8 additional minutes

Avocado Egg

This is my new favorite food! We made it as a side dish yesterday because the avocado's were starting to go soft and since the Mr. had to work late tonight, I made them again for myself. I really can't think of a more filling and healthy snack, breakfast, or side dish. Yes, yes, eggs and avocado are both a little high in fat...BUT it's the healthy kind of fat and as long as you are not eating like 10 a week, I think you will be in the clear! I know it looks strange but seriously..go make this now!

Cut avacado in half
Remove pit and scope out a small amout of avacado it pit is very small
