Paleo Coco-Pumpkin Muffins

Adapted From: What Runs Lori
http://www.whatrunslori.com/2011/12/purely-paleo-pumpkin-muffins/

After my long run today I needed a snack and nothing was doing the trick. Sometimes I just really miss bread! We have had lots of success with other types of muffins (apple, sweet potato, banana) and I had a can of pumpkin the fridge that was screaming to be eaten. I added coco powder mainly because what I really wanted at that moment was a snickers bar but it did add a nice flavor. Next time I think chocolate chips would really do the trick! These are not too sweet and best served with some honey or almond butter on the side!

The Fixin's
1 Cup Pumpkin Puree
1/2 Cup Coconut Flour
4 Eggs
1/4 Cup Honey
2 Tablespoons Coconut Oil
1 Tablespoon Coco Powder
1 Tablespoon Flax Seed
2 Teaspoons Cinnamon
1 Teaspoon Vanilla
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder

Let's Cook Dinner
Preheat oven to 400F
In a mixing bowl whisk eggs
Melt coconut oil and add to eggs
Stir in pumpkin and all dry fixins
Mix until well blended and there are no clumps
Grease 12 muffin tins
Spoon mixture into pan
Bake for 20 minutes

So if we were going to keep ourselves from going to store and buying ice cream, we needed to be creative! These are super yummy and best when topped with nut butter or honey. They are sweet but not too sweet and totally could be eaten for breakfast! Next time I am going to try adding chocolate chips or raisins!

1/2 Cup Coconut Flour
1/2 Cup Ground Flaxseed
1/4 Cup Honey

2 Teaspoons Cinnamon

Luckily no one has ever let me purchase a deep fryer and there more than an inch or snow on the ground which means I am staying inside! These were so so yummy. Once I put them in the freezer, it was really hard to wait for them to freeze BUT according to the directions you can't skip the part or the cheese sticks just melt. Banana Fluff Ice Cream

Adapted from: Two Peas and Their Pod & Recipe By Photo
http://www.twopeasandtheirpod.com/two-ingredient-banana-peanut-butter-ice-cream/
http://www.recipebyphoto.com/guilt-free-ice-cream/

Um I almost didn't want to share this recipe because I was having dreams of how I could make millions by packaging this up and selling it in stores. Seriously guys, it's THAT good. I have been feeling sick for the past week and not eating very much food besides the Korean Beef that I made on Monday and some left over Avocado Pudding but when I saw this recipe I had to make it. Like the original author, I am bad at bananas. I always buy them and they always go bad before I can eat them all so in addition to this being amazing, it's a great use for ripe bananas. Also, when making this recipe DO NOT skip any steps. If you don't freeze the banana's it won't work. I put mine in the freezer before I went to school. This picture just doesn't do it justice. Check out the pictures on the links above!

The Fixin's
4 Ripe Banana's
2 Tablespoons Agave or Honey
2 Tablespoons Sunflower Butter (Peanut Butter or Almond Butter will also work)
1 Tablespoon Cocoa Powder

Let's Cook Dinner
Peel the bananas and cut into small bite sized pieces
Put in a plastic freezer bag and freeze for at least 2 hours
Place frozen bananas into a food processor
Blend the bananas until smooth
**you will need to scape the sides and stir the mixture, it takes a while**
Add agave, sunflower butter, and cocoa powder
Blend until smooth
Enjoy (you might want to put it back in the freezer for a while before eating)
Store in the freezer in an airtight container for up to 4 days
***It might get hard if the freezer, if this happens put it in the microwave for 15 seconds

On a whim I though that I would try it and I am so glad I did. This is even better than  paleo ice cream and so much easier to make. Just trust me on this and try it!

The Fixin's
2 Avocado's
2 Tablespoons Agave
2 Tablespoons Coconut Oil
3 Tablespoons Milk
1/4 Cup Cocoa Powder
1 Teaspoon Vanilla Extract

http://summertomato.com/better-than-butternut-roasted-delicata-squash-recipe/

YUMMMMY! This was by far my favorite of the winter squash. One of the best ways to eat paleo on a budget is to eat the veggies that are in season. I always thought that winter squash looked really weird but I am glad that I got over it and learned to cook them. We have been eating butternut squash and acorn squash with sweet flavoring but this squash was savory and oh sooooo yummy!

http://paleomg.com/apple-cinnamon-muffins/

Today is my 100th post of the year yall! I can't believe it! When we started Moore Family Food way back at the beginning of the year I wasn't even planning on making the blog public. I had tried blogging before and never really kept at it. It wasn't until I realize just how many of my friends and family learning to cook and looking for fun, cheap, and easy meal ideas! Thanks for all the support, kind words, and ideas! I can't take credit for these as the Mr. found the recipe and cooked them. People seem to think that when you eat Paleo you can't make fun things like muffins. Just use almond and coconut flower and BAM you have muffins!

1 Large apple
1 Cup Almond Flour
3 Tablespoons Coconut Flour
3 Eggs
1/4 Cup Coconut Oil
2 Tablespoons Honey
1 Tablespoon Cinnamon

http://lifehacker.com/5881942/bake-an-egg-in-an-avocado-for-a-fast-and-healthy-breakfast-treat

This is my new favorite food! We made it as a side dish yesterday because the avocado's were starting to go soft and since the Mr. had to work late tonight, I made them again for myself. I really can't think of a more filling and healthy snack, breakfast, or side dish. Yes, yes, eggs and avocado are both a little high in fat...BUT it's the healthy kind of fat and as long as you are not eating like 10 a week, I think you will be in the clear! I know it looks strange but seriously..go make this now!

Salt
Pepper
Garlic Powder
Onion Powder

S'more Crescent Rolls

Adapted From: Realist Mom
http://www.realistmom.com/2011/07/24/sunday-sweetness-smore-crescent-rolls/

We almost never make dessert but with family in town for the long weekend it seemed like a great idea. You already know my love for crescent rolls and combined with marshmallows and chocolate this is to die for! We first made it for my birthday and when we went shopping for dessert, I remembered how awesome they were. We added the graham crackers to the original recipe. It gives it a very nice flavor and makes it taste closer to summer camp smores. They are also very kid friendly because the crescent roll holds all the mess inside. Everyone gave them a thumbs up!

The Fixin's
1 Can Crescent Rolls
1 Cup Chocolate Chips
1 Cup Mini Marshmallows
2-3 Graham Crackers

Let's Cook Dessert
Pre-heat oven to 375
Unroll crescent rolls onto non-stick pan
Place 10 chocolate chips and 6 marshmallows on each crescent roll

Roll up
Crush 2-3 graham crackers until fine

Roll each crescent roll in graham cracker mixture

Bake for 11-15 minutes or until golden brown

"Fried" Pickles

Adapted From: Schilling Times
http://joshandkinze.blogspot.com/search?q=pickles

About a year and half ago we moved away from Georgia. Among the many difficult adjustments was the lack of “southern cooking” in our new community. If you have ever been to the south chances are you have had a variety of deep fried vegetables. I swear, if you can deep fry it, you can find it on a menu. My favorite is fried pickles and I have been craving them since they day we packed up the U-Haul. I found these on pinterest and I must say, I was skeptical at first. For one thing these pickles are baked instead of fried but I miss southern cooking so much I was willing to give it a try. They are AWESOME and I feel less guilty about eating them since they are not cooked in a deep fryer. The original recipe calls for the use of Panko bread crumbs. While I have heard magical stories about them, I opted for Aldi brand Italian style bread crumbs that I had around the house and I have no complaints. At most restaurant, fried pickles are served with a dipping sauce. We used a dash of Frank’s hot sauce in ranch dressing, but plain ranch works great too.

The “Fixins”
1 jar pickle slices
2 eggs
1/3 cup flour
1 Tbsp Worcestershire sauce
1 tsp hot sauce
1 tsp garlic powder
1 tsp Cajun seasoning
1 tsp pepper
1 1/2 cups bread crumbs

Let’s Cook
In a mixing bowl, whisk together eggs and flour until smooth
Add Worcestershire sauce, hot sauce, garlic powder, Cajun seasoning, and pepper
Mix until well blended.
Place bread crumbs in a separate dish.
Dunk each pickle slice into the egg mixture, then into the bread crumbs

***Tip: Use one hand to dunk the pickles and the other hand to bread the pickles, this way one   hand stays dry***

Place breaded pickles on a greased baking sheet

Place pan in the middle rack of the oven.
Broil on high for 3 to 4 minutes on each side.

No Bake Energy Bites

Adapted From: Give Me Some Oven
 http://gimmesomeoven.com/no-bake-energy-bites

I am always looking for something quick to eat before a workout and these little puppies do the trick. Not only are they super easy to make, they are so much cheaper than buying Powerbar bites for pre/post run snacks. I have even taken them with me running in my race belt and they did great. You need to keep them in the fridge after you make them, but they should do fine in a lunch box. If they can make it through an 18 mile run, they can make it to lunch! The original recipe called for coconut flakes and flax seed. The Mr. doesn’t do coconut and for the life of me I cannot find flax seed at a reasonable price…so we just added an additional cup of oats. No harm done! I think there are a lot of ways you could tweak this recipe. I am looking forward to trying raisins and maybe nuts.

The “Fixins”
2 cup dry oatmeal
1/2 cup chocolate chips
1/2 cup peanut butter
1/3 cup honey
1 tsp. vanilla

Let’s Cook
Mix all ingredients together in a bowl until the oats thoroughly coated. This is messy and you will need to use your hands.

Let chill in the refrigerator for half an hour.
After 30 minutes, pack the ingredients into small balls, it should make about 20.

Store in an airtight container and keep refrigerated for up to 1 week.
