Sausage Egg Muffins

This was my contribution to breakfast this week but as you can see, I liked them so much that I ate one with my dinner! I cannot even describe how easy these were to make and store. I baked them Monday night then I put them in a plastic bag and left them in the fridge. Everyone morning I warmed two for 1 1/2 minutes in the microwave....awesome breakfast done! They are filling and full of protein. These are totally a keeper!

 
 
The Fixin's
1 lb Italian Sausage
1-2 Cups Chopped Broccoli
8 Eggs
1/4 Cup Milk
1/2 Tablespoon Olive Oil
1/2 Teaspoon Baking Powder
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1 Tablespoon Grated Parmesan Cheese

Let's Cook Dinner
Preheat oven to 375F
Cook sausage in a large skillet, drain fat
Chop broccoli into small pieces, add to skillet and stir
In a mixing bowl, whisk eggs, milk, and seasonings together
Spray a 12 hole cupcake pan with cooking spray
Spoon sausage broccoli mixture into each cup
Spoon egg mixture evenly into each cup
Sprinkle tops with additional parmesan cheese if desired
Bake for 15 to 20 minutes or until eggs are set and fluffy

Honey Lime Chicken

I am always trying to mix it up with the chicken recipes while still keeping it paleo! Pinterest has truly been my best friend these days! Most of the recipes I find are for grilling, but they can easily be adapted for the skillet. This was yummy, the lime cuts the sweetness but it doesn't have the same tang as some of the others that use lime juice. When your cooking the chicken, make sure it cook it until the liquid is almost absorbed and the chicken is almost sticky. This gives it GREAT flavor.


The Fixin's
1 lb Chicken
1/4 Cup Lime Juice
1/4 Cup Olive Oil
2 Tablespoons Honey
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Chili Powder

Let's Cook Dinner
In a bowl mix honey, lime juice, olive oil, salt, chili powder, and pepper until well blended
Cut chicken into bite sized pieces
Pour sauce over chicken

Melt 2 tablespoons of butter in a large skillet
Cook chicken until no longer pink

****To freeze, place chicken in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Delicata Squash

YUMMMMY! This was by far my favorite of the winter squash. One of the best ways to eat paleo on a budget is to eat the veggies that are in season. I always thought that winter squash looked really weird but I am glad that I got over it and learned to cook them. We have been eating butternut squash and acorn squash with sweet flavoring but this squash was savory and oh sooooo yummy!

The Fixin's
1 Delicata Squash
2 Teaspoons Olive Oil
1/2 Teaspoon Pepper
1/2 Teaspoon Salt
1/2 Teaspoon oregano

Let's Cook Dinner
Preheat oven to 400F
Cut the ends off the squash
Cut the squash length ways in half
Remove the seeds and strings
Cover with olive oil, pepper, salt, and oregano
Place in the bottom of a baking dish
Cover with tin foil
Bake for 30 minutes

Roasted Sweet Potatoes

Think sweet potato fries but SO MUCH BETTER! We had a few left over sweet potatoes and I thought I would give this a try. The best part about these is that they are baked and not fried.


The Fixin's
3 Sweet Potatoes
4 Tablespoons Olive Oil
4 Tablespoons Grated Parmesan Cheese
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1/2 Oregano

Let's Cook Dinner
Preheat oven to 400F
Peel and slice sweet potatoes
Cut into small pieces
In a mixing bowl combine olive oil, cheese, salt, pepper, and oregano
Put sweet potatoes into bowl and stir until well combined
Place sweet potatoes on a baking sheet covered with tin foil
Bake for 30 minutes, flipping over after 15 minutes

Honey Spice Chicken

This was yummy! I think I start all of my blog posts out with that phrase but hey if it wasn't yummy I wouldn't be posting it! The chicken was not as spicy as I thought it might be. I think next time I cook it I will cut the honey but if you are not a spice person it will be perfect. These chicken meals are my favorite. I can even explain how easy it is to make 5 or 6 all in one day, freeze, and then cook right after work or school. Easy is the key word here! One thing with the chicken is that you want to make sure you are cooking it until the sauce is soaked up and the chicken starts to get a bit sticky. This was you get all the flavor!


The Fixin's
1 lb Chicken
2 Teaspoons Chili Powder
2 Teaspoons Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Cumin
1 Teaspoon Cajun Seasoning
1/2 Cup Honey
2 Tablespoons White Vingar
 
Let's Cook Dinner
In a bowl mix honey, vingar, cajun seasoning, cumin, salt, onion powder, garlic powder, chili powder, and pepper until well blended
Cut chicken into bite sized pieces
Pour sauce over chicken

Melt 2 tablespoons of butter in a large skillet
Cook chicken until no longer pink

****To freeze, place chicken in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Apple Muffins

Today is my 100th post of the year yall! I can't believe it! When we started Moore Family Food way back at the beginning of the year I wasn't even planning on making the blog public. I had tried blogging before and never really kept at it. It wasn't until I realize just how many of my friends and family learning to cook and looking for fun, cheap, and easy meal ideas! Thanks for all the support, kind words, and ideas! I can't take credit for these as the Mr. found the recipe and cooked them. People seem to think that when you eat Paleo you can't make fun things like muffins. Just use almond and coconut flower and BAM you have muffins!


The Fixin's
1 Large apple
1 Cup Almond Flour
3 Tablespoons Coconut Flour
3 Eggs
1/4 Cup Coconut Oil
2 Tablespoons Honey
1 Tablespoon Cinnamon
1/2 Teaspoon Baking Soda
Pinch of Salt
 
Let's Cook Dinner
Preheat oven to 350F
In a mixing bowl combine almond flour, coconut flour, cinnamon, baking soda, and a pinch of salt
Whisk eggs in a separate mixing bowl and pour into flour mixture
Melt coconut oil and add to mixture
Add honey and cinnamon
Mix until very well blended, the mixture will look dry but DON'T worry
Place batter in greased muffin pan
Bake for 25 to 30 minutes

Roasted Lemon Cauliflower

Our nephew William's favorite food is roasted cauliflower. I have never met a three year old who loves veggies as much as he does! I don't normally ever buy cauliflower but after seeing all the paleo recipes that use it I decided I need to look into it. I really like this recipe, William might be on to something!


The Fixin's
1 Medium Cauliflower
1/4 Cup Olive Oil
1 Tablespoon Minced Garlic
2 Tablespoons Lemon Juice
2 Tablespoons Grated Parmesan Cheese
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Let's Cook Dinner
Preheat oven to 400F
Chop the cauliflower into small pieces
In a mixing bowl combine olive oil, garlic, lemon juice, parmesan cheese, salt, and pepper until well blended
Stir in cauliflower and coat well
Cover a baking sheet with tin foil and spray with cooking spray
Pour cauliflower onto baking sheet
Bake for 20 minutes, flipping over after 10 minutes

Ginger Pork

These turned out great! I was a little bit worried when I started cooking it in the skillet because there was SO much liquid, but that cooked off pretty quickly and the pork got a great sticky coating. We liked it so much we had trouble saving some for tomorrow's lunch! I cooked the green onion along with the pork but you could totally put it on top afterwards if you have a picky eater!


The Fixin's
1 lb Pork Chops
1 Teaspoon Ginger
1 Teaspoon Garlic Powder
1/3 Soy Sauce
1/3 Orange Juice
1/4 Cup Honey
1 Green Onion

Let's Cook Dinner
In a bowl mix ginger, garlic powder, soy sauce, orange juice, and honey until well blended 
Pour sauce over pork

Melt 2 tablespoons of butter in a large skillet
Cook pork until no longer pink

Top with  chopped green onions

****To freeze, place pork in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

Mexican Portobello Mushrooms

I can't even explain how great these were! Since we decided to go paleo I have been missing a few of my favorite foods. After searching the internet, I found that a lot of people cook tacos and pizzas on mushrooms. I decided to give it a try and the results were great! Make sure you buy large portobello mushrooms and don't overload them or they will flatten out when you bake them. They also expell a lot of water when they cook, so bake them on a baking sheet with a lip.


The Fixin's
4 Portobello Mushroom Caps
1 lb Ground Beef
1/2 Cup Salsa
1 Cup Shredded Mexican Cheese
1/2 Cup Spinach Leaves
1 Packet Taco Seasoning
 
Let's Cook Dinner
Pre-heat the oven to 350F
In a skillet cook ground beer, drain fat, and add taco seasoning
Clean/wash the mushrooms, remove gills and stem
Place mushrooms on a baking sheet lined with tin foil
Cover the bottom of eat cap with spinach leaves
Top with several spoonfuls of ground beef
Top with salsa and cheese
Bake for 20 mushrooms
** the mushrooms will expell a lot of water so don't worry, you will know it is done when it feels tender to the touch.

Mom's Chicken Pot Pie

This recipe is anything but paleo, but I must say I LOVE IT. In 2010, I ran the Atlanta ING Marathon in PR setting time after eating this for my pre-race meal. I skipped it a few times and then ate it again before an amazing 2012 Wisconsin Marathon and so began my pre-race ritual of chicken pot pie before big races! After eating this on Saturday, I am happy to report another marathon PR, this meal may be magic!


The Fixin's
1 1/2 lb Chicken
1 10.5 oz Can Cream of Chicken Soup
1 Cup Chicken Broth
1 Can English Peas
1 Eggs
1 Cup Milk
1 Cup Flour
1 Cup Butter

Let's Cook Dinner
Preheat Oven to 350F
Cook chicken by boiling, in a skillet, or baking
Shred chicken
In a mixing bowl combine chicken broth and cream of chicken soup and stir until well combined
Drain peas and add to mixing bowl
Hard boil 2 eggs, peel, and chop
Stir in eggs
Stir in chicken
**if the mixture looks dry, add a little more chicken broth
Pour mixture into large baking dish
In a different mixing bowl, combine melted butter, milk, and flour and stir until well combined
Spoon mixture ontop of the chicken in the baking dish
Bake for 45 minutes to 1 hour or until the crust in golden brown

Tomato Basil Soup

This was such an amazing soup. I have never made soup before so I have nothing to compare it too but I was so happy with hour it turned out! It was creamy, just a little sweet, and perfect for a cold winter night. To made this paleo, use almond flour, although I cheated and used regular flour because I wasn't really paying attention! We served this soup as a side item but it is heavy enough to be a main course.

 
The Fixin's
5 Tablespoons Butter
2 Tablespoons Minced Garlic
1/2 Cup Flour
2 -2.5 Cups Heavy Whipping Cream
56 oz Crushed Tomatoes
1 Cup Diced Tomato
2.5 Tablespoons Chicken Broth
3 Tablespoons Basil
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Let's Cook Dinner
Melt butter in saucepan
Add garlic and saute for one minute
Add flour and stir till a ball forms and it soaks up the butter
Slowly pour in whipping cream and stir till it begins to thicken and flour thins out
Stir in chicken broth, tomatoes,basil, salt, and pepper
Stir until combined
Simmer and stir often for 20 minutes

Zesty Pork

I found this recipe came from pinterest as I was searching for freezer meals. We have been getting in the habit of buying meat and other fixin's on Sunday and separating it all out into bags. I then make the marinades, pour them into the bag with a label, and off they go into the freezer. This way we start the week with 6 -7 meals prepared almost all the way done. This was a great one! A lot of the recipes have been very sweet and this was a welcomed change! It's kind of, well, zesty, and packs a mild but spicy punch!


The Fixin's
4 Cloves Minced Garlic
1 Teaspoon Onion Powder
1/4 Cup Olive Oil
1.5 Teaspoons Paprika
1 Teaspoon Cumin
1 Teaspoon Parsley
1/2 Teaspoon Salt
1/2 Teaspoon Red Pepper Flakes

Let's Cook Dinner
In a bowl mix garlic, onion powder, olive oil, paprika, cumin parsley, salt, and red pepper flakes until well blended
Pour sauce over pork

Melt 2 tablespoons of butter in a large skillet
Cook pork until no longer pink

****To freeze, place pork in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above
