Easy (Paleo) Chicken Parm

Chicken Parm is normally pretty difficult and timely to make. Not to mention all that cheese and fried breading is far from paleo. This recipe does have a good amount of cheese because that is pretty much impossible to cut out. Look for a real, non processed cheese or cut the amount in the recipe if you need too but DON'T leave it out! The Mr. loved the meal and I loved how quick it was to put together. The Mr suggested maybe adding a layer of pepperonis to spice it up....maybe next time!


The Fixin's
1 lb Chicken
1 Cup Almond Flour
1 Teaspoon Oregano
1 Teaspoon Basil
1 Teaspoon Garlic Salt
1 Jar Marinara Sauce
6 Slices Mozzarella Cheese
Olive Oil

Let's Cook Dinner
Preheat oven to 425F
Grease a glass baking dish
Cut chicken breasts into 1/4's
Cut 6 slices of cheese in half
Combine flour, oregano, basil, and garlic salt in a mixing bowl
Cover each piece of chicken in the flour
Heat some olive oil in a large frying pan on high heat
Place the chicken in the skillet a few pieces at a time and brown the outside to make a crust
Lay the chicken flat in the baking dish
Place a 1/2 slice of cheese over each piece of chicken
Pour sauce over the entire pan
Bake for 35-40 minutes or until chicken is no longer pink
