Delicata Squash

YUMMMMY! This was by far my favorite of the winter squash. One of the best ways to eat paleo on a budget is to eat the veggies that are in season. I always thought that winter squash looked really weird but I am glad that I got over it and learned to cook them. We have been eating butternut squash and acorn squash with sweet flavoring but this squash was savory and oh sooooo yummy!

The Fixin's
1 Delicata Squash
2 Teaspoons Olive Oil
1/2 Teaspoon Pepper
1/2 Teaspoon Salt
1/2 Teaspoon oregano

Let's Cook Dinner
Preheat oven to 400F
Cut the ends off the squash
Cut the squash length ways in half
Remove the seeds and strings
Cover with olive oil, pepper, salt, and oregano
Place in the bottom of a baking dish
Cover with tin foil
Bake for 30 minutes
