Yes I know that this has like a million fixin's and will dirty up a ton of dishes BUT it is soooooo yummy. The Mr. gets all the credit for the cooking AND cleaning of this dish. Enjoy!
The Fixin's
1 lb Breakfast Sausage
6 Strips Bacon
1 Large Sweet Potato
3 Cups Spinach
12 Eggs
1/2 Cup Cheese
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Tablespoon Siracha
1 Teaspoon Cayan Pepper
1 Teaspoon Pepper
1/2 Teaspoon Salt
Let's Cook Dinner
Preheat Oven to 375F
Peel and dice sweet potatoes
Chop spinach
In a skillet cook sausage, remove and set aside
Add sweet potatoes to skillet with sausage oil and cook for 15 minutes
In a different skillet cook bacon, crumble into pieces
In a large mixing bowl combine sweet potatoes, spinach, sausage, and bacon
Pour mixture into greased 9 x 13 baking dish
In a mixing bowl whisk eggs
Add spices to eggs
Pour into baking dish over meat/veggie mixture
Bake for 25-30 minutes
