Tomato Basil Soup

This was such an amazing soup. I have never made soup before so I have nothing to compare it too but I was so happy with hour it turned out! It was creamy, just a little sweet, and perfect for a cold winter night. To made this paleo, use almond flour, although I cheated and used regular flour because I wasn't really paying attention! We served this soup as a side item but it is heavy enough to be a main course.

 
The Fixin's
5 Tablespoons Butter
2 Tablespoons Minced Garlic
1/2 Cup Flour
2 -2.5 Cups Heavy Whipping Cream
56 oz Crushed Tomatoes
1 Cup Diced Tomato
2.5 Tablespoons Chicken Broth
3 Tablespoons Basil
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Let's Cook Dinner
Melt butter in saucepan
Add garlic and saute for one minute
Add flour and stir till a ball forms and it soaks up the butter
Slowly pour in whipping cream and stir till it begins to thicken and flour thins out
Stir in chicken broth, tomatoes,basil, salt, and pepper
Stir until combined
Simmer and stir often for 20 minutes
