Honey Lime Chicken

I am always trying to mix it up with the chicken recipes while still keeping it paleo! Pinterest has truly been my best friend these days! Most of the recipes I find are for grilling, but they can easily be adapted for the skillet. This was yummy, the lime cuts the sweetness but it doesn't have the same tang as some of the others that use lime juice. When your cooking the chicken, make sure it cook it until the liquid is almost absorbed and the chicken is almost sticky. This gives it GREAT flavor.


The Fixin's
1 lb Chicken
1/4 Cup Lime Juice
1/4 Cup Olive Oil
2 Tablespoons Honey
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Chili Powder

Let's Cook Dinner
In a bowl mix honey, lime juice, olive oil, salt, chili powder, and pepper until well blended
Cut chicken into bite sized pieces
Pour sauce over chicken

Melt 2 tablespoons of butter in a large skillet
Cook chicken until no longer pink

****To freeze, place chicken in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above
