Beef Boomers

I got the idea for these beef sandwhichs from the Peperoncini Pork Sandwhichs we made back in May. It's almost the same sandwhich but tastes totally different! I froze some of the stew meat from last week's beef tips and rice and this was the perfect use for the left over beef tips!


The Fixin's
1 lb Stew Meat
1 Packet Dry Gravy Mix
Sliced Pepper Jack Cheese
French Rolls
1-2 Bell Peppers

Let's Cook Dinner
Cook stew meat in the Crockpot on low for 8 hours
Skim fat, shred meat, and stir in gravy mix
Dice bell peppers and cook for 2 to 3 minutes in a small skillet
Spoon beef and peppers onto a french roll
Top with one slice of cheese
Boil or bake for 5 minutes until cheese is melted and roll is crisp
