Doritos Chicken Bake

This is a great Mexican casserole! Not only is it easy, but it gives me an excuse to buy Doritos! It's something I could make often but it's worth the splurge in money and calories! If you like your Mexican spicy, I would suggest adding more taco seasoning. Also, it make great left overs just make sure you heat it up in the oven so the chips stay crisp!




The Fixin's
1 lb Chicken
1 Cup Instant Rice
1 10.5 oz Can Cream of Chicken Soup
1 10.5 oz Can Rotel Tomatoes
1 Tablespoons Taco Seasoning
2 Tablespoons Milk
2 Cups Mexican Cheese
1 Cup Crushed Doritos

Let's Make Dinner
Preheat oven to 350F
Cook chicken and cut into chunks
In a mixing bowl combine chicken, uncooked instant rice, cream of chicken soup, undrained rotel, seasoning, milk, and 1.5 cups of cheese until well mixed
Pour into medium sized, greased cassrole dish
Bake for 25 minutes, uncovered
Remove from oven and top with 1/2 cup of cheese and 1 cup crushed doritos
Bake for 5 to 10 additional minutes
