This is my new favorite food! We made it as a side dish yesterday because the avocado's were starting to go soft and since the Mr. had to work late tonight, I made them again for myself. I really can't think of a more filling and healthy snack, breakfast, or side dish. Yes, yes, eggs and avocado are both a little high in fat...BUT it's the healthy kind of fat and as long as you are not eating like 10 a week, I think you will be in the clear! I know it looks strange but seriously..go make this now!
The Fixin's
1 Large Avacado
2 Eggs
Salt
Pepper
Garlic Powder
Onion Powder
Let's Cook Dinner
Preheat oven to 425F
Cut avacado in half
Remove pit and scope out a small amout of avacado it pit is very small
Season with garlic and onion powder
Crack egg into avacado
Season with salt and pepper
Bake on a cooking sheet for 20 minutes or until egg is set

Roasted Red Potatoes

These were AMAZING! They were crispy, yummy, and if I do say so myself, tasted better then French Fries. This is a great side dish for any fall meal!
The Fixin's
4-5 Red Potatoes
1-2 Tablespoons Olive Oil
2 Cloves Minced Garlic
1 Teaspoon Onion Powder
1 Teaspoon Parsley
1 Teaspoon Paprika
1 Teaspoon Cajun Seasoning
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
Tin Foil
Let's Cook Dinner
Preheat oven to 400F
Cut potatoes into bite sized pieces
In a mixing bowl combine olive oil, garlic, onion powder, parsley, paprika, Cajun seasoning, salt, and pepper until well combined
Pour potatoes into bowl and stir until coated
Line a baking sheet with tin foil and grease tin foil
Spoon potatoes onto foil
Bake for 30 minutes, turning after 15 minutes

Pepper Lime Chicken

This was such an awesome meal. I did not expect the chicken to have such a tangy, lime flavor. When is discovered the many dump chicken recipes I had planned on baking them. After the Peanut Butter Chicken incident, I think I will cook the chicken in the skillet from now on. This week we bought 5 lbs of chicken to be cut in pieces and cooked in various homemade sauces. This is such a quick and easy idea for the week nights and most sauces can be made with things you already have at home!

1/4 Teaspoon Salt
2 Tbalespoons of Butter
Let's Cook Dinner
In a bowl mix lime juice, garlic, pepper, olive oil, basil, and salt until well blended
Cut chicken into bite sized pieces
Pour sauce over chicken
Melt 2 tablespoons of butter in a large skillet
Cook chicken until no longer pink
****To freeze, place chicken in gallon sized freezer bag
Pour sauce in bag and seal
Label with date and contents
When ready to cook, thaw and cook according to above

White Chicken Chili

This is the perfect fall chili! We made it last winter and I was so excited that it was "cool enough " this week to start making soups and chili's again! I love regular chili but this is a very nice change. It is also very very easy! I have seen it floating around Pinterest as a great football tailgating food!
The Fixin's
1 - 2 lb Chicken
1 Can Black Beans
1 Can Corn
1 Can Rotel
1 Package Ranch Dressing Seasoning
1 Teaspoon Cumin
1 Tablespoon Chili Powder
1 Teaspoon Onion Powder
8 oz Cream Cheese
Let's Cook Dinner
Spray Crockpot with cooking spray
Place Chicken in the bottom of the CrockPot
Pour in undrained corn, undrained rotel, and black bean that are drained and rinsed
Top with seasonings
Stir
Place block of cream cheese on top
Cook on low for 6 hours
Stir
Shred chicken
Stir and serve

Tuna Cakes
Tuna Cakes Adapted From: Dishes and Dishes

4 Cans Tuna
4 Eggs
8 Tablespoons Flour (To follow Paleo, use 4 Tablespoons almond flour, 4 Tablespoons Coconut Flour)
2 Table spoons Lemon Juice
2 Teaspoons mustard
2 Teaspoons Garlic Powder
2 Teaspoons Onion Powder
1/4 Teaspoon Cayenne
Let's Cook Dinner
Beat eggs
Drain tuna
Mix all the "fixin's" together into a mixing bowl
Form 8 patties and place on a plate
Heat oil in a large skillet
Cook patties for about 3 minutes on each side or until golden brown
Serve with ranch

Remember the Paleo diet that I told you about a few posts ago? The Mr. has been looking around for some neat and easy Paleo recipes to try and this one sounded great. Now the tuna cakes we made are not actually Paleo because we used regular flour, after two trips to two different stores I could not find almond flour! No harm done really, I operate on the theroy that if I make it at home it's 150% better for me then if I went to a fast food place! These are a nice change in the meal line up and were super yummy!

Eggless Cookie Dough

I should not be left alone with food blogs. This week is the second week of my "summer vacation" aka the two weeks between summer and fall classes. I was craving something sweet when I came across eggless cookie dough...and who doesn't love to eat cookie dough. I had everything on had and whipped it up right away! It was the perfect afternoon treat. I think it would be a great way to make cookie dough ice cream as well!
The Fixin's
1/2 Cup Butter
3/4 Cup Brown Sugar
1 Cup All-Purpose Flour
1/2 Teaspoon Salt
1 Tablespoon Vanilla Extract
1 Cup Semisweet Chocolate Chips
Let's Cook Dinner
Melt butter
In a mixing bowl, combine butter and brown sugar until well blended
Stir in flour, salt, vanilla, and chocolate chips
Mix well
Add one tablespoon of water if dough is too thick
Refrigerate for 1 hour

Paleo Chocolate Ice Cream

Do you have an ice cream maker? If you don't, you should! We love makers...and we have a lot of them! The ice cream maker doesn't get used very often but maybe that's a good thing! The Mr. recently got started doing Crossfit. A big part of the Crossfit lifestyle is the "Paleo Diet". In simple terms, eating paleo means only eating food that a cave man ( in the Paleo Era) would eat. Over my dead body was my intial reaction...BUT...we have been working in some paleo meals into our diet and I can't complain too much! This ice cream is awesome. It tastes like a Wendy's frosty and stores well for 2 -3 days!
The Fixin's
14oz Coconut Milk
1/4 Cup Honey
2 Tablespoons Cocoa Powder
1 Teaspoon Vanilla
Let's Cook Dinner
Combine coconut milk, honey, vanilla, cocoa powder in a blender and mix until well blended
Pour mixture into ice cream maker
After 10 to 15 minutes, transfer the ice cream into another bowl and place in the freezer for 30 minutes
Store in a sealed container
