Stove Top Salmon Patties

Remember the salmon cakes that I made a few weeks ago? Well I had planned on making them today for lunch but my muffin pan was not cooperating, so I made these babies instead! I combined a few recipes to adjust from my traditional tuna cakes and I am in LOVE. After a crazy crossfit workout this morning, a protein packed lunch was just what I needed. I topped mine with dill relish and a bit of ketchup and mustard!

The Fixin's
1 14oz Can Salmon
2 Eggs
1 Tablespoon Lemon Juice
1 Tablespoon Yellow Mustard
6 Tablespoons Almond Flour
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1/4 Teaspoon Cajun Seasoning

Let's Cook Dinner
Beat eggs
Drain salmon
Mix all the "fixin's" together into a mixing bowl
Form 8 patties and place on a plate
Heat olive oil in a large skillet
Cook patties for about 3 minutes on each side or until golden brown

Blackened Tilapia

This was really yummy! I love this blackened seasoning that my mother in law uses BUT the only place that I can buy it is a Wal-mart and I DON'T love Wal-mart. I was hoping that this would be the same and it was pretty darn close! We got lots of snow today and had tons of fun playing in it!



 
The Fixin's
6-8 Tilapia Fillets
Olive Oil
1 Tablespoon Paprika
1 Tablespoon Cajun Seasoning
1 Teaspoon Basil
1 Teaspoon Cumin
1 Teaspoon Oregano
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Salt
1/2 Teaspoon Pepper
1/2 Teaspoon Crush Red Pepper

Let's Cook Dinner
 In a big mixing bowl combine all of the seasonings
Stir
Coat each side of the fillets in the seasonings
Heat olive oil in a large skillet
Cook each fillet for 3 minutes
Flip
Cook for another 3 minutes

Salmon Cakes

They say that runner's need a lot of protein and I am pretty sure that even though we eat meat almost every day, I am not getting enough. I know for a fact that I don't get enough protein at lunch and it always leaves me hungry for cookies or candy while I'm in class. I love tuna cakes but they take a while to make and I am not the best a frying things so I was pretty happy to see a baked version. The added veggies is a nice bonus too. Overall I thought these were great. They were easy to cook and stored great for lunch this week!


The Fixin's
1 14oz Can Salmon
1/2 Cup Almond Flour (or bread crumbs if you don't follow paleo)
2 Eggs
1/3 Cup Milk
1 Zucchini
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder

Let's Cook Dinner
Preheat Oven to 350F
Grease an 8 hole muffin tin
In a food processor, shred zucchini until it is fine
Drain salmon
In a mixing bowl combine salmon, flour, eggs, milk, zucchini, and seasoning
Mix with hands until well combine
Form in balls and place in muffin cups
Bake for 25 minutes

Parmesan Tilapia

Yum Yum Yum! We don't cook enough fish and I really don't know why. It is so so easy to make and very filling! This was great and is best served with a dash of lemon juice on top when you serve it!


The Fixin's
6 Tilapia Fillets
1 Cup Grated Parmesan Cheese
3 Tablespoons Paprika
2 Tablespoons Parsley
2 Tablespoons Lemon Juice
1 Teaspoon Salt
1 Teaspoon Pepper

Let's Cook Dinner
Preheat oven to 400F
Line a baking sheet with tin foil and grease
In a mixing bowl combine cheese, paprika, pasley, salt, and pepper until well blended
Dip each fillet into cheese mixture
Place on baing sheet
Drizzle with lemon juice
Bake for 12-15 minutes

Tuna Cakes

Remember the Paleo diet that I told you about a few posts ago? The Mr. has been looking around for some neat and easy Paleo recipes to try and this one sounded great. Now the tuna cakes we made are not actually Paleo because we used regular flour, after two trips to two different stores I could not find almond flour! No harm done really, I operate on the theroy that if I make it at home it's 150% better for me then if I went to a fast food place! These are a nice change in the meal line up and were super yummy!

 
The Fixin's
4 Cans Tuna
4 Eggs
8 Tablespoons Flour (To follow Paleo, use 4 Tablespoons almond flour, 4 Tablespoons Coconut Flour)
2 Table spoons Lemon Juice
2 Teaspoons mustard
2 Teaspoons Garlic Powder
2 Teaspoons Onion Powder
1/4 Teaspoon Cayenne

Let's Cook Dinner
Beat eggs
Drain tuna
Mix all the "fixin's" together into a mixing bowl
Form 8 patties and place on a plate
Heat oil in a large skillet
Cook patties for about 3 minutes on each side or until golden brown
Serve with ranch

Fish Tacos

My mother-in-law is a wonderful cook and has set the bar really high when it comes to cooking for the Mr. She has also been an amazing resource in helping me learn to cook. When she came to visit us in the fall, she made these fish tacos and we have made them at least every two weeks ever since. They are super easy and fish is a nice change from all the chicken that we eat. We use frozen tilapia but I am sure that you could use any small, white fish. The first time we had the meal we purchased a spicy ranch dressing but because salad dressing is expensive, I like to make my own. I follow the directions on the dry ranch dressing packet and then add a few tablespoons of hot sauce to give it a kick.



The Fixin's
1 Bag Frozen Tilapia
Cajun Seasoning
1 Package Small Tortillas
1 Bag Cole Slaw
2-4 tbsp Hot Sauce
1 Packet Dry Ranch Dressing Seasoning
1 Cup Sour Cream



Let's Cook Dinner
Thaw tilapia according to directions
Season both sides of fish with cajun seaosning until well covered



Cook fish in frying pan with oil for 3- 5 minutes on each side or until fish is flaky and cooked through
Prepare ranch dressing, adding 2-4 tbsp of hot sauce
Heat tortillas under wet paper towl for 20-30 seconds
Wrap a piece of fish, spoon full of cole slaw, and dressing in tortilla.
